  • Dried red chilies – 2
  • Cumin seeds – ½ tsp
  • Coriander seeds – 1 tsp
  • A pinch of turmeric
  • A little water (for blending)

 

Step-by-Step Recipe

 

Step 1: Prepare and Roast the Brinjals

  1. Wash the small brinjals and make a cross-slit (X cut) on the bottom of each, without cutting them all the way through. The brinjals should stay whole but be slightly open to hold the masala later.
  2. Heat 2 tablespoons oil in a pan and lightly fry the brinjals on medium heat until they’re soft and slightly golden. Don’t overcook. Take them out and set them aside.

 

Step 2: Make the Masala Paste

  1. In a dry pan, roast peanuts for a few minutes till they start popping and get a light color.
  2. Add sesame seeds, coconut, dried red chilies, cumin, and coriander seeds. Roast everything together for 2–3 minutes until it smells nutty and aromatic.
  3. Let it cool, then transfer to a blender. Add a bit of water and grind into a smooth paste. This is your base masala.

 

Step 3: Cook the Gravy

  1. In the same pan, heat 1–2 tablespoons oil.
  2. Add mustard seeds and let them pop. Then add curry leaves and sauté for a few seconds.
  3. Add chopped onions and cook until they turn soft and golden.
  4. Add ginger-garlic paste and sauté till the raw smell goes away.
  5. Now add the prepared masala paste and cook it for about 5–7 minutes, stirring often. Add a splash of water if it sticks.
  6. Once the masala is cooked and oil starts to separate slightly, add tamarind pulp, salt, and a little more water to make a gravy.

 

Step 4: Add Brinjals and Simmer

  1. Now gently add the fried brinjals into the gravy.
  2. Cover and let everything simmer on low heat for 10–12 minutes, so the brinjals absorb the flavors.

मसाले के लिए (पेस्ट बनाने के लिए):

  • मूंगफली – 2 टेबल स्पून
  • सफेद तिल – 1 टेबल स्पून
  • नारियल (कद्दूकस किया हुआ या सूखा) – 2 टेबल स्पून
  • सूखी लाल मिर्च – 2 नग
  • जीरा – ½ छोटा चम्मच
  • धनिया के बीज – 1 छोटा चम्मच
  • हल्दीएक चुटकी
  • थोड़ा पानी (पीसने के लिए)

 

बनाने की विधि (Step-by-Step Recipe)

 

Step 1: बैंगन की तैयारी

  1. छोटे-छोटे बैंगन लें, अच्छे से धोकर सुखा लें।
  2. अब हर बैंगन में नीचे से क्रॉस में कट करें (X जैसा), लेकिन ऊपर से जोड़ रहने देंमतलब वो खुलें, लेकिन अलग हों।
  3. एक कढ़ाई में थोड़ा तेल गरम करें और इन कटे हुए बैंगनों को हल्का तल लें जब तक वो नरम और हल्के सुनहरे हो जाएं। फिर निकाल कर एक तरफ रख दें।

 

Step 2: मसाला पेस्ट बनाना

  1. एक सूखी कढ़ाई में सबसे पहले मूंगफली भूनें जब तक हल्की सी खुशबू आने लगे और रंग बदल जाए।
  2. फिर उसमें तिल, नारियल, सूखी लाल मिर्च, जीरा और धनिया बीज डालें। इन सबको साथ में 2-3 मिनट भूनें जब तक खुशबू आने लगे।
  3. अब इस भूने हुए मिश्रण को ठंडा करके मिक्सी में थोड़ा पानी डालकर बारीक पेस्ट बना लें। यही हमारा स्पेशल मसाला है।

 

Step 3: ग्रेवी बनाना

  1. उसी कढ़ाई में फिर से थोड़ा तेल गरम करें।
  2. इसमें राई डालें और जब वो चटकने लगे, तब करी पत्ते डालें।
  3. अब कटा हुआ प्याज़ डालें और सुनहरा भूनें
  4. फिर अदरक-लहसुन का पेस्ट डालें और 1–2 मिनट भूनें जब तक कच्ची महक ना जाए।
  5. अब इसमें जो आपने मसाला पेस्ट बनाया है, वो डालें और 5–7 मिनट तक भूनें, जब तक तेल अलग होने लगे।
  6. अब इमली का गूदा, नमक, और ज़रूरत के अनुसार पानी डालें और एक उबाल आने दें।

 

Step 4: बैंगन डालें और पकाएं

  1. अब जो बैंगन आपने पहले तले थे, उन्हें इस ग्रेवी में डालें।
  2. ढककर धीमी आंच पर 10–12 मिनट तक पकने दें ताकि बैंगन अच्छे से मसाले का स्वाद सोख लें।
  3. बीच-बीच में हल्के हाथ से चलाते रहें ताकि बैंगन टूटें नहीं।

 

Step 5: परोसना और सजाना

  1. पकने के बाद गैस बंद करें और ऊपर से कटा हुआ हरा धनिया डालें।
  2. गरमा-गरम बाग़ारा बैंगन तैयार है!
  3. इसे आप प्लेन राइस, ज़ीरा राइस, बिरयानी, रोटी या पराठे के साथ सर्व कर सकते हैं।
