Baingan Pakora Recipe (Brinjal Fritters)

medium-sized baingan (eggplant / brinjal)
- 1 cup gram
flour (besan)
- ½ tsp red
chili powder
- ¼ tsp
turmeric powder
- ½ tsp carom
seeds (ajwain)
- Salt – to

baking soda (optional – for extra crispiness)
- Water – as
needed to make batter
- Oil – for

Step
1: Slice the Baingan
- Wash the
brinjal thoroughly and pat it dry.
- Cut it into
thin round slices – about ½ cm thick. Try to keep all slices even so they
cook uniformly.
- If your
brinjal has too many seeds or is bitter, you can soak the slices in salted
water for 10–15 minutes, then drain and pat dry.
Step
2: Prepare the Batter
- In a large
mixing bowl, add besan (gram flour).
- Mix in the
red chili powder, turmeric, salt, ajwain, and a pinch of baking soda (if
using).
- Slowly add
water, a little at a time, and whisk it into a smooth, lump-free batter.
It should be neither too thick nor too runny — just thick enough to coat the baingan slices.
Tip:
Use cold water for extra crispy pakoras!
Step
3: Heat the Oil
- Heat enough
oil in a deep frying pan or kadhai on medium flame.
- To check if
the oil is ready, drop a little batter into the oil. If it rises up
immediately, the oil is hot enough.
Step
4: Fry the Pakoras
- Dip each
brinjal slice in the batter and coat it well on both sides.
- Gently slide
it into the hot oil. Don’t overcrowd the pan — fry in batches.
- Fry on
medium flame until the pakoras turn golden brown and crispy on both sides.
- Remove them
using a slotted spoon and place on tissue paper to drain excess oil.

5: Serve Hot!
- Your crispy
baingan pakoras are ready to serve!
- Enjoy them
hot with green chutney, tamarind chutney, or just plain old tomato
ketchup.
- Don’t forget
the hot chai — because pakoras and chai are a match made in heaven!

Tips:
- Want to make
it even more flavorful? Add a little garam masala or chaat masala to the
batter.
- For a spicy
twist, mix some chopped green chilies or crushed black pepper into the
batter.

crunchier pakoras, fry them twice: once lightly, then again just before

- 1 कप बेसन (चना आटा)

बनाने की विधि – स्टेप बाय स्टेप
स्टेप 1: बैंगन को काटें
- बैंगन
को अच्छे से धो लें और सुखा लें।
- अब
उसे गोल पतले टुकड़ों में काट लें — न बहुत मोटे, न बहुत पतले। लगभग आधा सेंटीमीटर मोटाई ठीक रहती है।
- अगर
बैंगन में बीज ज़्यादा हों या कड़वा लगे, तो आप उन्हें थोड़ी देर नमक वाले पानी में भिगो सकते हैं। फिर पानी निकालकर सुखा लें।
स्टेप 2: बैटर (घोल) तैयार करें
- एक
बाउल में बेसन लें।
- उसमें
डालें – नमक, लाल मिर्च पाउडर, हल्दी, अजवाइन और एक चुटकी बेकिंग सोडा।
- अब
थोड़ा-थोड़ा करके पानी डालते हुए मिक्स करें।
- ध्यान
रखें कि घोल न ज्यादा पतला हो, न ज्यादा गाढ़ा — ऐसा होना चाहिए कि बैंगन की स्लाइस पर अच्छे से चिपक जाए।
अगर ठंडा पानी डालेंगे तो पकोड़े और भी ज्यादा कुरकुरे बनेंगे।
स्टेप 3: तेल गरम करें
- कढ़ाही
में तेल गरम करें।
- मध्यम
आंच पर रखें और तब तक गरम करें जब तक उसमें डाले बेसन की बूंद ऊपर तैरकर न आ जाए — मतलब तेल तैयार है।
स्टेप 4: पकोड़े तलना
- अब
हर बैंगन की स्लाइस को बेसन के घोल में अच्छे से डुबोएं।
- फिर
धीरे से गरम तेल में डाल दें।
- एक
बार में ज़्यादा स्लाइस न डालें, वरना पकोड़े चिपक सकते हैं।
- दोनों
तरफ से सुनहरे और कुरकुरे होने तक तलें।
- फिर
टिशू पेपर पर निकाल लें ताकि अतिरिक्त तेल निकल जाए।
स्टेप 5: गरमा-गरम परोसें
- लीजिए
तैयार हैं आपके गरमागरम बैंगन के पकोड़े!
- इन्हें
हरी चटनी, इमली की मीठी चटनी या फिर सिंपल टमाटर सॉस के साथ खाइए।
- और
अगर साथ में एक प्याली चाय हो, तो बात ही बन जाए।
कुछ आसान टिप्स:
- घोल
में थोड़ा चाट मसाला या गरम मसाला डाल दें तो स्वाद और बढ़ जाता है।
- पकोड़े
और भी ज्यादा कुरकुरे चाहिए? तो एक बार तलने के बाद निकालें, फिर दोबारा हल्का सा तल लें।
- बच्चों
के लिए बना रहे हैं तो मिर्च कम रखें, बड़ों के लिए थोड़ा तीखा कर सकते हैं।
