This dish is all about crispy, golden slices of brinjal, shallow-fried with just the right blend of spices. It’s comfort food in every sense — especially when served with warm rice, dal, or khichuri.

 

Key Ingredients

  • Brinjal (eggplant/begun) – 1 large (the big, round, purple one works best)
  • Salt – to taste
  • Turmeric powder – ½ tsp
  • Red chili powder – ½ tsp (adjust to your spice level)
  • Rice flour or besan (gram flour) – 1 to 2 tbsp (optional, for extra crispiness)
  • Mustard oil – 3 to 4 tbsp (or any cooking oil, but mustard oil gives authentic flavor)

 

Step-by-Step Instructions

 

Step 1: Slice the Brinjal

  1. Take one large brinjal and wash it properly.
  2. Cut it into medium-thick round slices — about ½ inch thick. Don’t cut them too thin or they’ll get soggy. Too thick, and they won’t cook through.
  3. If your brinjal has a lot of seeds or is too bitter, soak the slices in salted water for 10–15 minutes. This helps remove the bitterness. Then pat dry with a clean towel.

 

Step 2: Season the Slices

  1. In a large bowl or plate, place all the brinjal slices.
  2. Sprinkle salt, turmeric powder, and red chili powder all over.
  3. Optionally, you can also sprinkle a bit of rice flour or besan. It helps add a light crisp crust.
  4. Rub the spices gently onto each slice so that they are evenly coated.
  5. Let them sit for 10 minutes to absorb the flavor.

 

Step 3: Shallow Fry the Brinjal

  1. Heat mustard oil in a flat pan or tawa on medium flame. You want a good amount of oil so the slices can get crispy, but not too much that they’re swimming in it.
  2. Once the oil is hot and slightly smoky (that’s how mustard oil should be before cooking), carefully place the slices in the pan in a single layer.
  3. Fry on medium-low heat, so the brinjal becomes soft inside and crispy outside.
  4. Flip each slice gently after about 3–4 minutes, when the bottom is golden brown.
  5. Fry the other side till golden and fully cooked. Each side should have a beautiful golden color with slightly crisp edges.

Don’t rush the frying. Low heat gives it that perfect soft-inside, crisp-outside texture.

 

Step 4: Serve It Up

  1. Remove the slices onto a tissue-lined plate to absorb extra oil.
  2. Serve hot with:

ü  Steamed rice and masoor dal (a Bengali classic combo)

ü  Khichuri (especially on rainy days)

ü  As a side with roti or paratha

 

Tips & Variations:

  • Mustard oil gives the authentic Bengali taste — but if you don’t have it, use any oil you prefer.
  • You can also add a pinch of bhaja masala (roasted spice mix) after frying for extra flavor.
  • Want more crunch? Double coat the slices with a light batter of besan + spices before frying.
  • Leftover begun bhaji can also be mashed with mustard oil and green chili to make a rustic begun bharta style mash.

जरूरी सामग्री

  • बैंगन (बड़ा, गोल) – 1
  • नमकस्वाद अनुसार

  • बेसन या चावल का आटा – 1-2 बड़े चम्मच (चाहें तो, भाजी को और कुरकुरा बनाने के लिए)
  • सरसों का तेल – 3-4 बड़े चम्मच (अगर नहीं है तो कोई भी तेल चला सकता है)

 

बनाने की विधिस्टेप बाय स्टेप

 

स्टेप 1: बैंगन काटें

  1. सबसे पहले बैंगन को धोकर साफ़ कर लें।
  2. उसे मोटे-मोटे गोल स्लाइस में काट लें, लगभग आधा सेंटीमीटर मोटे।
  3. अगर बैंगन थोड़ा कड़वा लगे तो स्लाइस को नमक वाला पानी में 10-15 मिनट के लिए भिगो दें। इससे कड़वाहट निकल जाती है।
  4. फिर स्लाइस को निकालकर अच्छे से सुखा लें, ताकि तलते वक्त तेल छींटे मारे।

 

स्टेप 2: मसाला लगाएं

  1. कटे हुए स्लाइस को एक बड़े बर्तन या थाली में रखें।
  2. ऊपर से नमक, हल्दी, और लाल मिर्च पाउडर छिड़कें।
  3. अगर चाहें तो बेसन या चावल का आटा भी छिड़क सकते हैं, इससे भाजी और क्रिस्पी बनेगी।
  4. धीरे-धीरे सभी स्लाइस पर मसाले अच्छे से लगा लें।
  5. 10 मिनट के लिए स्लाइस को ऐसे ही रख दें, ताकि मसाले अंदर तक अच्छे से घुल जाएं।

 

स्टेप 3: बैंगन तलें

  1. एक पैन में सरसों का तेल गरम करें।
  2. जब तेल हल्का धुआं देने लगे (यह सरसों तेल के लिए सही तापमान है), तो धीरे-धीरे बैंगन के स्लाइस डालें।
  3. मध्यम आंच पर तलें ताकि अंदर से बैंगन नरम और बाहर से हल्का कुरकुरा हो जाए।
  4. एक तरफ से सुनहरा भूरा होने पर पलट दें और दूसरी तरफ भी इसी तरह तलें।
  5. तलते वक्त स्लाइस को धीरे-धीरे पलटें ताकि टूटे नहीं।

 

स्टेप 4: परोसें

  1. तले हुए बैंगन को किचन पेपर या टिशू पेपर पर निकालें ताकि अतिरिक्त तेल सोख लिया जाए।
  2. गरमा गरम बंगाली स्टाइल बैंगन भाजी को चावल और दाल के साथ परोसें।

 

कुछ खास टिप्स:

  • सरसों का तेल अगर आपके पास नहीं है तो आप साधारण वनस्पति तेल भी इस्तेमाल कर सकते हैं, लेकिन सरसों तेल का जो तड़का और खुशबू होती है, वह इसे खास बनाती है।
  • अगर आप बेसन या चावल का आटा नहीं डालना चाहते तो भी ये भाजी बहुत स्वादिष्ट बनेगी।
  • तलने के बाद आप ऊपर से थोड़ा हरा धनिया भी छिड़क सकते हैं।
  • ये भाजी बची हुई हो तो अगले दिन हल्का सा गर्म करके भी खा सकते हैं।
