the Chutney:
- Brinjal

- Tamarind – a
small lemon-sized ball (or 1 tbsp paste)

- Curry leaves

- Salt – as

For
Tempering (Tadka):
- Oil – 1½
tablespoons (preferably sesame or regular cooking oil)
- Mustard
seeds – 1 teaspoon
- Urad dal
(optional) – 1 teaspoon
- Dried red
chillies – 1 or 2
- Curry leaves
– a few
- Asafoetida
(Hing) – a pinch
Step-by-Step
Recipe:
Step
1: Roast the Brinjals
- Wash and dry
the brinjal(s).
- Grease them
lightly with oil, then roast them directly over flame or on a stovetop
griddle. Keep turning till the skin is charred and the brinjal becomes
soft inside.
- Let it cool,
then peel off the skin and scoop out the soft flesh. Mash it lightly and
set aside.
Tip: If you
don’t have a gas stove, you can bake the brinjal at 200°C (400°F) for about 30
minutes, then peel.
Step
2: Prepare the Chutney Base
- In a pan,
heat a teaspoon of oil.
- Add garlic,
green chillies, and curry leaves. Sauté till garlic turns slightly golden.
- Add tamarind
and sauté for a few seconds (if using paste, add later).
- Turn off the
flame. Let this mixture cool a bit.
Step
3: Blend the Chutney
- In a mixie
jar (or mortar & pestle if you prefer rustic texture), add the roasted
brinjal pulp, the garlic-chilli mix, salt, and tamarind (paste or soaked).
- Grind
everything to a coarse or smooth paste, depending on your preference. Do not
add water unless absolutely necessary.
It
should be thick and flavorful—like a hearty spread.
Step
4: Tadka Time (Tempering)
- Heat the remaining
oil in a small pan.
- Add mustard
seeds and let them splutter.
- Add urad dal
(if using), dried red chillies, curry leaves, and a pinch of hing.
- Fry until
dal turns golden and everything smells aromatic.
- Pour this
hot tadka over your chutney and mix well.
Step
5: Serve and Enjoy
- Serve the Begun
Chutney with steamed rice + ghee, idli, dosa, or
even just with roti.
- You can also
spread it on toast or mix it with curd for a quick dip!

- If you like
a smoky flavor, make sure you roast the brinjal directly on flame.
- Add a few

मसालों की

साथ एकदम देसी अंदाज़ में बनती है। इसे आप
चावल, इडली, डोसा या
पराठे के
साथ मज़े से
खा सकते हैं।
एक
सिंपल लेकिन तड़केदार चटनी, जो
भूने हुए बैंगन, इमली और
लहसुन के
ज़ायके से
भरी होती है। स्वाद ऐसा कि
उंगलियाँ चाटते रह
जाओ।
ज़रूरी सामग्री:
चटनी के लिए:
- बैंगन
(मोटी वाली या 2-3 पतली) – 1 बड़ा या 2-3 मीडियम
- इमली
– एक छोटा नींबू जितनी (या 1 टेबलस्पून पेस्ट)
- लहसुन
– 4 से 6 कलियाँ
- हरी
मिर्च – 2 से 3 (स्वाद अनुसार)
- करी
पत्ते – थोड़े से
- नमक
– स्वादानुसार
तड़के के लिए:
- तेल
– 1½ टेबलस्पून
(तिल का तेल हो तो और अच्छा, वरना कोई भी चल जाएगा)
- राई
(सरसों के बीज) – 1 टीस्पून
- उरद
दाल – 1 टीस्पून (ऐच्छिक)
- सूखी
लाल मिर्च – 1 या 2
- करी
पत्ते – थोड़े से
- हींग
– एक चुटकी
स्टेप-बाय-स्टेप विधि:
स्टेप 1: बैंगन भूनना
- बैंगन
को अच्छे से धोकर पोंछ लें।
- उसके
ऊपर थोड़ा सा तेल लगाएं और गैस पर या तवे पर सीधा भूनें। चारों तरफ से घुमा-घुमा कर तब तक सेंकें जब तक छिलका जल न जाए और बैंगन अंदर से नरम हो जाए।
- अब
बैंगन को थोड़ा ठंडा करें, फिर उसका छिलका उतारकर नरम गूदा निकाल लें। हल्का सा मैश कर लें और साइड में रख दें।
टिप:
अगर गैस नहीं है
तो बैंगन को
ओवन में भी
200°C पर 30 मिनट बेक कर
सकते हैं।
स्टेप 2: चटनी का मसाला बनाएं
- एक
पैन में थोड़ा सा तेल गरम करें।
- उसमें
लहसुन, हरी मिर्च और करी पत्ते डालें और हल्का सुनहरा होने तक भूनें।
- अब
उसमें इमली डालें (अगर पेस्ट है तो बाद में डाल सकते हैं)। कुछ सेकंड भूनें।
- गैस
बंद करें और इस मिक्सचर को थोड़ा ठंडा होने दें।
स्टेप 3: चटनी पीसना
- मिक्सी
जार में भुना हुआ बैंगन, भुना हुआ लहसुन-हरी मिर्च वाला मसाला, नमक और इमली डालें।
- इसे
दरदरा या स्मूद जैसा चाहें वैसा पीस लें। ज़रूरत लगे तो थोड़ा सा पानी डाल सकते हैं, लेकिन ज्यादा नहीं।
चटनी गाढ़ी और
स्वाद से
भरपूर होनी चाहिए, पतली न
बनाएं।
स्टेप 4: तड़का लगाना
- अब
एक छोटे पैन में बाकी तेल गरम करें।
- उसमें
राई डालें – जब वो चटकने लगे तब उरद दाल, सूखी मिर्च, करी पत्ता और हींग डालें।
- दाल
हल्की सुनहरी हो जाए तो गैस बंद करें और ये तड़का चटनी पर डाल दें।
- अच्छे
से मिला लें।
स्टेप 5: परोसें और मज़ा लें
- ये
बैंगन की चटनी गरम चावल पर घी के साथ डालकर खाइए – लाजवाब स्वाद आएगा।
- इसे
इडली, डोसा, पराठे या यहां तक की ब्रेड के साथ भी खा सकते हैं।
