cubes and boil them in water until soft, then mash.

2: Soak and Prepare Tamarind
- Soak
tamarind in warm water for 10–15 minutes.

स्टेप 1: बैंगन पकाना या भूनना
- बैंगन
को अच्छे से धो लें।
- अब
या तो गैस पर सीधे जला कर भूनें (जैसे भर्ता बनाते हैं), या फिर बैंगन को काटकर थोड़े पानी में उबाल लें।
- जब
बैंगन नरम हो जाए, तो छिलका हटा लें और गूदा (पल्प) अच्छे से मैश कर लें।
भुना हुआ बैंगन रसम में स्मोकी स्वाद लाता है

- इमली

स्टेप 4: बैंगन और मसाले मिलाना
- अब
इस उबले बेस में मैश किया हुआ बैंगन डालें।
- साथ
ही डालें – रसम मसाला (या रेडीमेड रसम पाउडर), दरदरी कुटी लहसुन और काली मिर्च पाउडर।
- इन
सबको अच्छे से मिलाकर धीमी आंच पर 5–7 मिनट उबालें।
अगर पानी कम
लगे तो
थोड़ा और
डाल सकते हैं।
स्टेप 5: तड़का लगाना
- एक
छोटे तड़का पैन में तेल या घी गर्म करें।
- उसमें
राई डालें और चटकने दें।
- फिर
डालें – हींग, सूखी लाल मिर्च और करी पत्ता।
