Bengali-Style Masoor Dal (Red Lentil Curry)
A
Comforting Bowl of Tradition
There's
something magical about how Bengalis transform simple red lentils into a delicacy
that comforts the soul. Where the humble lentil meets the perfect balance of
spices and that distinctive Bengali touch.
What
You'll Need (Serves 4-5):
·
1 cup red lentils
(masoor dal), washed until water runs clear
·
1 medium onion,
finely sliced (the Bengali way!)
·
2 tomatoes,
chopped
·
3-4 garlic
cloves, crushed (we love our garlic!)
·
1-inch ginger,
grated
·
2 green chilies,
slit lengthwise
·
1 tsp cumin seeds
·
1 tsp turmeric
powder
·
1 tsp cumin
powder
·
1 tsp coriander
powder
·
½ tsp red chili
powder (optional)
·
1 bay leaf (tej
patta)
·
1 dry red chili
·
½ tsp Bengali
garam masala (equal parts cinnamon, cardamom, cloves)
·
1 tbsp mustard
oil (the secret ingredient!)
·
3 cups water
·
Salt to taste
·
Fresh coriander
for garnish
·
1 tbsp ghee (for
that final flourish)
Let's
Cook It Right:
1. The Perfect Dal Base:
·
Wash the lentils
until the water runs absolutely clear - this makes all the difference.
·
In your pressure
cooker or pot, combine dal with 3 cups water, turmeric, and salt.
·
Cook until
completely mushy (about 3 whistles in pressure cooker or 20 mins simmering).
The texture should be creamy but not watery.
2. The Bengali Tempering (Phoron):
·
Heat mustard oil
in a kadai until it just starts smoking - this removes the raw smell.
·
Lower heat and
add bay leaf, dry red chili, and cumin seeds. Let them sizzle for 10 seconds.
·
Add sliced onions
and fry until they turn translucent with golden edges.
·
Toss in crushed
garlic, ginger, and green chilies. The aroma should make your mouth water!
3. Building Flavors:
·
Add chopped
tomatoes and cook until they break down completely.
·
Sprinkle cumin
powder, coriander powder, and red chili powder. Stir for 30 seconds.
·
Now add your
cooked dal and mix well. Let it simmer for 5-7 minutes.
4. The Bengali Touch:
·
Sprinkle that
special Bengali garam masala (just a pinch makes all the difference).
·
Finish with a
dollop of ghee swirled on top - this is non-negotiable!
·
Garnish with
fresh coriander and keep covered for 5 minutes before serving.
Serving Suggestions:
·
Traditionally
served with steamed rice and a wedge of lemon.
·
Pairs beautifully
with begun bhaja (fried eggplant) or aloo bhaja.
·
For
non-vegetarians, a side of macher jhol (fish curry) makes it a feast.
Pro Tips:
ü Mustard oil is key - but if unavailable, use
regular oil with ½ tsp mustard seeds.
ü The onion slices should be thin but not minced
- texture matters.
ü Let the dal rest for 10 minutes after cooking
- the flavors develop beautifully.
ü A squeeze of lemon before serving brightens
all the flavors.

बंगाली स्टाइल मसूर दाल
घर जैसा स्वादिष्ट और आरामदायक व्यंजन
क्या आपने कभी बंगाली घरों में बनने वाली वो
ख़ास मसूर दाल चखी है

ही मन
ललचा उठे? जिसमें बंगाल के
ख़ास मसाले और
तरीके से
पकाया जाता है।
सामग्री (4-5 लोगों के लिए):
·
1 कप मसूर दाल (अच्छी तरह धुली हुई)
·
1 मध्यम प्याज़ (बारीक कटी हुई - बंगाली स्टाइल में!)
·
2 टमाटर (कटे हुए)
·
3-4 लहसुन की
कलियाँ (कुचली हुई)
·
1 इंच अदरक (कद्दूकस किया हुआ)
·
2 हरी मिर्च (लंबा चीरा लगा हुआ)
·
1 छोटी चम्मच जीरा
·
1 छोटी चम्मच हल्दी पाउडर
·
1 छोटी चम्मच जीरा पाउडर
·
1 छोटी चम्मच धनिया पाउडर
·
½ छोटी चम्मच लाल मिर्च पाउडर (वैकल्पिक)
·
1 तेज पत्ता
·
1 सूखी लाल मिर्च
·
½ छोटी चम्मच बंगाली गरम मसाला (दालचीनी, इलायची, लौंग बराबर मात्रा में)
·
1 बड़ा चम्मच सरसों का
तेल (यही तो
ख़ासियत है!)
·
3 कप पानी
·
नमक
स्वादानुसार
·
ताज़ा
धनिया (गार्निश के
लिए)
·
1 बड़ा चम्मच घी
(आखिरी में डालने के
लिए)
बनाने की विधि:
1. दाल को सही तरीके से पकाएं:
·
दाल
को तब
तक धोएं जब
पानी एकदम साफ न
निकलने लगे।
·
प्रेशर
कुकर या
बर्तन में दाल, 3 कप
पानी, हल्दी और
नमक डालकर पकाएं।
·
दाल
को पूरी तरह गलने दें (प्रेशर कुकर में 3 सीटी या
20 मिनट धीमी आंच पर)। दाल क्रीमी होनी चाहिए, पानी-पानी नहीं।
2. बंगाली फोरन (तड़का):
·
कढ़ाई
में सरसों का
तेल गरम करें जब
तक धुआं न
निकलने लगे - इससे कड़वाहट दूर होती है।
·
आंच
धीमी करके तेज पत्ता, सूखी लाल मिर्च और
जीरा डालें। 10 सेकेंड चटकने दें।
·
कटा
हुआ प्याज़ डालकर हल्का सुनहरा होने तक
भूनें।
·
अब
कुचला लहसुन, अदरक और
हरी मिर्च डालें। खुशबू आपका मुँह में पानी ला
देगी!
3. स्वाद बनाना:
·
कटे
हुए टमाटर डालकर पूरी तरह गलने दें।
·
जीरा
पाउडर, धनिया पाउडर और
लाल मिर्च पाउडर डालकर 30 सेकेंड भूनें।
·
अब
पकी हुई दाल डालकर अच्छी तरह मिलाएं। 5-7 मिनट धीमी आंच पर
पकने दें।
4. बंगाली टच:
·
ऊपर
से वो
ख़ास बंगाली गरम मसाला छिड़कें (बस
एक चुटकी काफी है!)।
·
आखिर
में एक
चम्मच घी
की धार डालें - यह
स्टेप स्किप नहीं करना!
·
ताज़ा
धनिया से
गार्निश करें और
परोसने से
पहले 5 मिनट ढककर रख
दें।
परोसने का तरीका:
·
पारंपरिक
तौर पर
भात (चावल) और
नींबू के
साथ परोसें।
·
बेगुन
भाजा (तली हुई बैंगन) या
आलू भाजा के
साथ बहुत अच्छी लगती है।
·
नॉन-वेज खाने वालों के
लिए माछेर झोल (मछली की
करी) के
साथ परफेक्ट कॉम्बिनेशन है।
ख़ास टिप्स:
ü सरसों का
तेल ज़रूरी है
- अगर न
हो तो
साधारण तेल में ½ छोटी चम्मच राई के
दाने डाल लें।
ü प्याज़ के
टुकड़े पतले कटे होने चाहिए, बारीक नहीं - टेक्सचर मायने रखता है।
ü दाल पकने के
बाद 10 मिनट रख
दें - स्वाद और
बेहतर हो
जाता है।
ü परोसने से
पहले नींबू निचोड़ लें - सारे स्वाद जगमगा उठेंगे।
यह
सिर्फ खाना नहीं, बचपन की

प्याला है
