There's something magical about the way tangy tamarind dances with earthy red lentils in a proper sambhar. This isn't just any lentil soup - it's a warm hug from South India, where every household has its own secret touch.


What Goes In (Serves 4-6):

The Lentil Base:

·           1 cup masoor dal (red lentils)

·           1 small lemon-sized tamarind (or 2 tbsp tamarind paste)

·           1/2 tsp turmeric powder

·           3 cups water for cooking dal

·           1 cup mixed vegetables (drumsticks, carrots, pumpkin, brinjal)


The Spice Magic:

·           2 tbsp sambhar powder (store-bought or homemade)

·           1/4 tsp asafoetida (hing)

·           1/2 tsp mustard seeds

·           1/2 tsp fenugreek seeds

·           10-12 curry leaves

·           2 dry red chilies

·           1 large onion, finely chopped

·           2 tomatoes, chopped

·           2 green chilies, slit

·           1 tbsp jaggery (or sugar)


The Tempering:

·           2 tbsp coconut oil (or any oil)

·           1 tsp mustard seeds

·           1 sprig curry leaves

·           2 dry red chilies

·           1 tbsp chopped coriander leaves


Let's Make It Step-by-Step:

1. Prep Work:

·           Soak tamarind in 1 cup warm water for 15 mins. Squeeze and strain the pulp.

·           Wash dal until water runs clear - this makes all the difference in texture.


2. Cook the Dal:

·           In a pressure cooker, combine dal, turmeric, and 3 cups water.

·           Cook for 3 whistles (or simmer 20 mins) until completely mushy.

·           Mash slightly with the back of a spoon - should be creamy but not watery.


3. Vegetable Dance:

·           In a separate pot, boil mixed veggies with just enough water to cover.

·           Cook until tender but not mushy (about 5-7 mins). Keep aside.


4. Build the Flavor:

·           Heat oil in a kadai. Add mustard, fenugreek seeds, and let them pop.

·           Let it simmer for 5 mins until raw smell disappears.

·           Now add cooked dal and boiled veggies. Mix gently.

6. Final Tempering (Tadka):

·           Heat coconut oil in a small pan.

·           Add mustard seeds, let them pop.

·           Toss in curry leaves and red chilies.

सामग्री (4-6 लोगों के लिए):

दाल के लिए:

·           1 कप मसूर दाल (लाल दाल)

·           नींबू के आकार का इमली का गूदा (या 2 बड़े चम्मच इमली पेस्ट)

·           1/2 छोटी चम्मच हल्दी पाउडर

·           दाल पकाने के लिए 3 कप पानी

·           1 कप मिक्स सब्जियां (ड्रमस्टिक, गाजर, कद्दू, बैंगन)


मसालों का जादू:

·           2 बड़े चम्मच सांभर पाउडर (बाजार का या घर का बना हुआ)

·           1/4 छोटी चम्मच हींग

·           1/2 छोटी चम्मच राई

·           1/2 छोटी चम्मच मेथी दाना

·           10-12 करी पत्ते

·           2 सूखी लाल मिर्च

·           1 बड़ा प्याज, बारीक कटा हुआ

·           2 टमाटर, कटे हुए

·           2 हरी मिर्च, लंबा चीरा लगा हुआ

·           1 बड़ा चम्मच गुड़ (या चीनी)


तड़के के लिए:

·           2 बड़े चम्मच नारियल तेल (या कोई भी तेल)

·           1 छोटी चम्मच राई

·           1 टहनी करी पत्ते

·           2 सूखी लाल मिर्च

·           1 बड़ा चम्मच कटा हरा धनिया


बनाने की विधि:

1. तैयारी:

·           इमली को 1 कप गर्म पानी में 15 मिनट के लिए भिगो दें। निचोड़कर गूदा निकाल लें।

·           दाल को तब तक धोएं जब पानी साफ निकलने लगे - यह टेक्सचर के लिए जरूरी है।


2. दाल पकाएं:

·           प्रेशर कुकर में दाल, हल्दी और 3 कप पानी डालें।

·           3 सीटी आने तक पकाएं (या 20 मिनट धीमी आंच पर)

·           चम्मच की पीठ से थोड़ा मैश करें - क्रीमी होनी चाहिए, पानी-पानी नहीं।

 

3. सब्जियां पकाएं:

·           अलग बर्तन में मिक्स सब्जियां थोड़े पानी में उबालें।

·           नरम होने तक पकाएं (लगभग 5-7 मिनट) अलग रख दें।

 

4. स्वाद बनाएं:

·           कड़ाही में तेल गरम करें। राई और मेथी दाना डालकर चटकने दें।

·           सूखी लाल मिर्च और करी पत्ते डालें - खुशबू से मुंह में पानी जाएगा!

·           प्याज डालकर हल्का सुनहरा होने तक भूनें। फिर टमाटर और हरी मिर्च डालें।

·           टमाटर के पूरी तरह गलने तक पकाएं (लगभग 3-4 मिनट)

 

5. सांभर तैयार करें:

·           सांभर पाउडर और हींग डालकर 30 सेकेंड भूनें।

·           इमली का पानी और 1 कप पानी डालें। गुड़ भी मिलाएं।

·           5 मिनट तक उबालें जब तक कच्ची गंध निकल जाए।

·           अब पकी हुई दाल और उबली सब्जियां डालकर हल्के से मिलाएं।

·           10 मिनट धीमी आंच पर पकने दें - सारे स्वाद मिल जाएं।


6. आखिरी तड़का:

·           छोटी कड़ाही में नारियल तेल गरम करें।

·           राई डालकर चटकने दें।

·           करी पत्ते और लाल मिर्च डालें।

·           इस सीजलिंग तड़के को सांभर पर डालें।

·           ताज़ा धनिया से गार्निश करें।

 

परोसने का तरीका:

·           भात, इडली या डोसा के साथ बेस्ट लगता है

·           नारियल चटनी और स्टर फ्राई सब्जियों के साथ परोसें
