Method:
Step
1: Prepare the Brinjals
- Wash the
brinjals well. Trim off the tops and slice them into thin round pieces —
not too thick or they won’t crisp up.
- If you’re
not cooking them right away, soak the slices in salted water to prevent
them from turning black.

2: Start Cooking
- Heat oil in
a wide, heavy-bottomed pan or kadai on medium flame.
- Once hot,
add mustard seeds. Let them splutter.

बनाने की विधि (स्टेप बाय स्टेप):
स्टेप 1: बैंगन काटना और तैयार करना
- सबसे
पहले बैंगनों को धोकर, उनका ऊपरी डंठल काट दीजिए।
- अब
इन्हें पतले-पतले गोल स्लाइस में काट लीजिए। बहुत मोटा ना काटें वरना पकने में समय लगेगा और कुरकुरे नहीं बनेंगे।

तुरंत नहीं पका रहे हैं तो इन्हें थोड़ी देर नमक वाले पानी में डाल दें ताकि काले न हों।
स्टेप 2: मसाले का तड़का लगाना
- एक
चौड़ी कढ़ाही या नॉन-स्टिक पैन में तेल गर्म करें।
- गर्म
होते ही उसमें राई डालें और उसे तड़कने दें।
- अब
जीरा, करी पत्ता और दरदरा लहसुन डालें। कुछ सेकंड चलाएं जब तक लहसुन हल्का सुनहरा न हो जाए।
स्टेप 3: प्याज डालना (यदि उपयोग कर रहे हों)
- अब
बारीक कटा हुआ प्याज डालिए। उसे सुनहरा और नरम होने तक भूनिए। प्याज से फ्राई में हल्की मिठास और टेक्सचर आता है।
स्टेप 4: बैंगन पकाना
- अब
कटे हुए बैंगन डालें। अच्छे से मिक्स करिए ताकि सारे मसाले उस पर चिपक जाएं।
- इसके
ऊपर हल्दी, नमक, और धनिया पाउडर डालकर अच्छे से मिलाएं।
- गैस
धीमी करके ढककर 8–10 मिनट पकाएं। बीच-बीच में हल्के से चलाते रहें ताकि जले नहीं।
- जब
बैंगन मुलायम हो जाए, तब ढक्कन हटा दें और बिना ढंके 4–5 मिनट और पकाएं ताकि किनारे से थोड़े क्रिस्पी हो जाएं।
स्टेप 5: तीखापन और खट्टापन जोड़ना
- अब
डालिए लाल मिर्च पाउडर। इसे आखिर में डालें ताकि जले नहीं।
- अगर
