For
the Aloo Kofta (Potato Balls):
- 3 medium boiled
potatoes – peeled and mashed
- 2 tbsp corn
flour or arrowroot flour (for binding)
- 1 green
chili – finely chopped
- 1 tsp grated
ginger
- Salt – to
taste
- A pinch of garam
masala
- Chopped
coriander leaves (optional)
- Oil – for deep or shallow frying
For
the Curry/Gravy:
- 1 medium onion
– finely chopped
- 2 medium tomatoes
– pureed
- 1 tsp ginger-garlic
paste
- 1/4 cup cashews
– soaked in warm water for 15 minutes and blended into a paste
- 1/4 tsp turmeric
powder
- 1 tsp coriander
powder
- 1/2 tsp red
chili powder (adjust to taste)
- 1/2 tsp garam
masala
- Salt – to
taste
- 2 tbsp oil
or ghee
- 1.5 cups water
(adjust for gravy consistency)
- 2 tbsp fresh
cream or milk (optional, for richness)
- Fresh coriander
leaves – for garnish

Step
1: Prepare the Koftas
- In a mixing
bowl, add mashed potatoes, cornflour, chopped green chili,
grated ginger, salt, garam masala, and coriander leaves.
- Mix
everything well and form a soft, smooth dough. If it feels sticky, add a
bit more cornflour.
- Divide the
mixture into small lemon-sized balls. Roll them gently between your palms.
- Heat oil in
a deep pan (for deep frying) or use a non-stick pan with a little oil (for
shallow frying).
- Fry the
koftas on medium flame till they’re golden and crisp from outside.
- Remove them
on tissue paper and keep them aside.
Tip:
Make sure oil is medium hot. If it’s too hot, the koftas might break or brown
too fast outside but stay uncooked inside.
Step
2: Make the Curry Base
- In a pan,
heat 2 tbsp oil or ghee.
- Add chopped
onions and sauté till golden brown.
- Add ginger-garlic
paste and cook for a minute until the raw smell goes away.
- Now add tomato
puree and cook till the oil starts to separate.
- Add all dry
spices – turmeric, red chili, coriander powder, salt – and mix well.
- Add the cashew
paste and cook for 2-3 minutes, stirring often.
- Pour in
about 1.5 cups of water. Let it simmer for 5–7 minutes.
- Add fresh
cream or milk and garam masala, mix well.
Step
3: Bring it All Together
- Right before
serving, add the koftas to the curry and simmer for just 1–2
minutes.
- Don’t
overcook after adding koftas – they are soft and can break.
- Garnish with
chopped coriander and a swirl of cream if you like.
How
to Serve Aloo Kofta Curry
- Serve hot
with:
- Naan, roti, or paratha
- Or even jeera
rice or plain basmati rice
- It’s a
special dish, perfect for guests or weekend meals.
Extra
Tips:
- Want to make
it ahead? Keep the koftas and curry separate, and mix just before
serving.
- You can also
stuff koftas with a little paneer or dry fruits for a richer
version.
- No cashews?
Use almonds or even skip and add cream for smoothness.

ज़रूरी सामग्री (3–4 लोगों के लिए)
कोफ्ते (आलू के बॉल्स) के लिए:
- 3 मीडियम साइज के उबले हुए आलू – छीलकर मैश किए हुए
- 2 टेबलस्पून कॉर्न फ्लोर या अरारोट (बाइंडिंग के लिए)
- 1 हरी मिर्च – बारीक कटी
- 1 छोटा चम्मच कद्दूकस किया अदरक
- स्वादानुसार नमक
- एक
चुटकी गरम मसाला
- थोड़े
से कटा हरा धनिया (वैकल्पिक)
- तेल
– तलने के लिए
करी (ग्रेवी) के लिए:
- 1 मीडियम प्याज़ – बारीक कटा हुआ
- 2 मीडियम टमाटर – प्यूरी बना लें
- 1 छोटा चम्मच अदरक-लहसुन पेस्ट
- 1/4 कप काजू – 15 मिनट गर्म पानी में भिगोकर पेस्ट बना लें
- 1/4 छोटा चम्मच हल्दी पाउडर
- 1 छोटा चम्मच धनिया पाउडर
- 1/2 छोटा चम्मच लाल मिर्च पाउडर (स्वाद अनुसार)
- 1/2 छोटा चम्मच गरम मसाला
- स्वादानुसार नमक
- 2 टेबलस्पून तेल या घी
- 1.5 कप पानी (या जरूरत अनुसार)
- 2 टेबलस्पून फ्रेश क्रीम या दूध (मलाईदार बनाने के लिए, वैकल्पिक)
- हरा
धनिया – सजाने के लिए
बनाने की विधि: आसान और घर जैसा तरीका
स्टेप 1: कोफ्ते तैयार करें
- एक
बाउल में मैश किए हुए आलू लें।
- उसमें
डालें – कॉर्न फ्लोर, हरी मिर्च, अदरक, गरम मसाला, नमक और हरा धनिया।
- सब
चीज़ों को अच्छे से मिलाकर सॉफ्ट सा आटा जैसा बना लें। अगर ज़्यादा नरम लगे तो थोड़ा और कॉर्न फ्लोर मिला लें।
- अब
इसमें से छोटे-छोटे बॉल्स बना लें।
- कढ़ाई
में तेल गरम करें और इन बॉल्स को मीडियम आंच पर सुनहरा और कुरकुरा होने तक तलें।
- तले
हुए कोफ्तों को पेपर टॉवल पर निकाल लें।
ध्यान रखें – तेल बहुत ज़्यादा गरम न हो वरना कोफ्ते बाहर से जल सकते हैं और अंदर से कच्चे रह जाएंगे।
स्टेप 2: ग्रेवी तैयार करें
- एक
पैन में 2 टेबलस्पून तेल या घी गरम करें।
- इसमें
बारीक कटा प्याज़ डालें और हल्का सुनहरा भूरा होने तक भूनें।
- अब
अदरक-लहसुन पेस्ट डालें और 1 मिनट तक भूनें जब तक कच्ची खुशबू न चली जाए।
- अब
टमाटर की प्यूरी डालें और तब तक पकाएं जब तक तेल किनारे छोड़ने लगे।
- अब
डालें – हल्दी, धनिया पाउडर, लाल मिर्च पाउडर और नमक। मसाले को अच्छे से भून लें।
- फिर
डालें काजू का पेस्ट, और 2-3 मिनट तक धीमी आंच पर भूनें।
- अब
इसमें पानी मिलाएं और उबाल आने दें।
- जब
ग्रेवी पक जाए तो उसमें क्रीम या दूध और गरम मसाला डालें। 1-2 मिनट और पकाएं।
स्टेप 3: कोफ्ते डालें और परोसें
- ग्रेवी
तैयार हो जाए तो गैस बंद करें और परोसने से ठीक पहले ही तले हुए कोफ्ते ग्रेवी में डालें।
- हल्के
हाथ से मिलाएं ताकि कोफ्ते टूटें नहीं।
- ऊपर
से कटा हरा धनिया और थोड़ा क्रीम डालें।
ध्यान दें: कोफ्ते ग्रेवी में ज़्यादा देर तक रहने पर टूट सकते हैं, इसलिए उन्हें सर्व करने से ठीक पहले ही डालें।
परोसने का तरीका:
- गरमा-गरम कोफ्ता करी को परोसें:
- ताजे
फुल्कों,
नान या पराठे के साथ
- या
फिर जीरा राइस, बासमती चावल के साथ
कुछ खास टिप्स:
- ग्रेवी
और कोफ्ते अलग-अलग बनाकर रखें, फिर जब खाना हो तब मिलाएं।
- आप
कोफ्तों में थोड़े काजू या किशमिश भी भर सकते हैं – शाही टच आ जाएगा।
- अगर
प्याज़-लहसुन नहीं खाते, तो बिना उसके भी बना सकते हैं – बस टमाटर, काजू और मसालों से भी ग्रेवी बन जाती है।
