Carrot Chutney
Forget
the boring chutneys! This carrot chutney is a vibrant, sweet, spicy, and tangy
condiment that will completely change your meal. It's fantastic with dosa and
idli, but wait until you try it with a simple plate of dal-rice or even spread
on a sandwich. It’s a little jar of sunshine.

- Carrots (1
cup, grated) – They
bring a natural, earthy sweetness and a beautiful orange color to the
chutney.
- The Tang:
Tamarind (a small marble-sized ball) OR 1 tbsp Lemon Juice – This is the "zing" that
balances the sweetness of the carrots. Tamarind gives a deeper, fruity
tang, while lemon is brighter and quicker.
- The Heat:
Dried Red Chilies (2-3, adjust to your taste) – They provide the spicy kick. You
can remove the seeds for a milder heat.
- The Savory
Base: Urad Dal (1 tbsp) & Chana Dal (1 tbsp) – These lentils, when roasted, give
the chutney a wonderful nutty flavor and a thick, creamy body.
- The Aroma:
Mustard Seeds (½ tsp) & Curry Leaves (1 sprig) – This is the classic tempering
that makes the chutney smell and taste incredible. It’s the soul of the
dish.
- The
Seasoning: Asafoetida (a pinch) & Salt (to taste) – Asafoetida (hing) adds a unique,
savory depth that is irreplaceable.
- The Fat: Oil
(2 tbsp) – We
use a little oil to roast the ingredients and for the tempering. It
carries all the flavors beautifully.

Make the Chutney: A Step-by-Step Walkthrough
Step 1: Get Your
Carrots Ready
Start by giving your carrots a good scrub and a peel. Then, grab your box
grater and grate them. You'll need about one cup of loosely packed grated
carrots. Don't worry about it being perfect.
Step 2: Roast the
Flavors (This is where the magic starts!)
Place a small pan on medium-low heat. Add one tablespoon of oil. Once the oil
is warm, add the urad dal and chana dal.
Keep
stirring them around. You'll see them start to turn a lovely golden-brown color
and your kitchen will fill with a wonderful, nutty aroma. This should take
about 2-3 minutes. Be careful not to burn them! Once they're golden, add the
dried red chilies and stir for just 30 more seconds. Turn off the heat and
scoop everything out of the pan onto a plate to cool.
Step 3: Cook the
Carrots
In the same pan, add the grated carrots. If the pan seems dry, you can add a
teaspoon more oil. Sauté the carrots on medium heat for about 4-5 minutes.
You're not trying to brown them, just cook them until they soften a bit and
lose their raw edge. This step makes them sweeter and easier to blend.
Step 4: The
Soaking (If using Tamarind)
While the carrots are cooking, take your small ball of tamarind and soak it in
¼ cup of warm water. Squeeze it with your fingers until it dissolves and you
have a thick, muddy-looking pulp. Discard the seeds and fibers. (If you're
using lemon juice instead, you can skip this step and add it later).
Step 5: Blend It
All Together
Let the roasted dals and the sautéed carrots cool down a bit. Then, transfer
them to a blender jar. Add the tamarind pulp (or lemon juice), a good pinch of
salt, and about 2-3 tablespoons of water.
Now, blend it! Start on a low speed
and then go higher, until you have a smooth paste. You might need to stop and
scrape down the sides or add a tiny bit more water to get the blades moving.
The chutney should be thick and smooth.
Step 6: The Grand
Finale - The Tempering (Tadka)
This is the step that elevates the chutney from great to unforgettable.
- In a small
tempering pan or your original pan, heat the remaining one tablespoon of oil.
- Once the oil
is hot, add the mustard seeds. Let them splutter and pop.
- Then, add
the curry leaves (be careful, they might splatter!) and the pinch of
asafoetida. Swirl the pan for just 10 seconds until the curry leaves
become crisp.
- Immediately,
pour this sizzling, fragrant oil right over the blended chutney in the
bowl. You will hear the most satisfying "sizzle" that is music
to a cook's ears.
Step 7: Mix and
Serve!
Give everything a good stir, mixing the tempering oil into the chutney.
Taste
it and adjust the salt or tanginess if needed. If it's too thick, you can stir
in a little more water to get your desired consistency.

Serve this glorious chutney immediately with hot dosas, fluffy idlis, or
steamed rice. It also keeps beautifully in the fridge in an airtight container
for up to a week.

चटनी बनाने की आसान विधि
पहला
कदम: गाजर तैयार करना
गाजर को

लें और
छील लें। फिर उन्हें बारीक कद्दूकस कर
लें। लगभग एक
कप कद्दूकस की
हुई गाजर तैयार रखें।
दूसरा
कदम: दाल और मसाले भूनना (यहीं से शुरू होता है जादू!)
एक छोटी कड़ाही को
मध्यम आंच पर
रखें। उसमें एक
बड़ा चम्मच तेल डालें। तेल गरम होने पर
उड़द दाल और
चना दाल डाल दें।
इन्हें लगातार चलाते रहें। आप
देखेंगे कि
दाल हल्की सुनहरी होने लगेगी और
एक शानदार खुशबू आने लगेगी। इसमें 2-3 मिनट लगेंगे। ध्यान रहे, दाल जले नहीं। सुनहरी होने पर
इसमें सूखी लाल मिर्च डालकर 30 सेकंड और
भूनें। आंच बंद कर
दें और
सारी भूनी हुई चीजें एक
प्लेट में निकाल लें।
तीसरा
कदम: गाजर को हल्का पकाना
उसी कड़ाही में कद्दूकस की
हुई गाजर डाल दें। अगर कड़ाही सूखी लगे तो
एक चम्मच तेल और
डाल सकते हैं। गाजर को
मध्यम आंच पर
4-5 मिनट तक
चलाते हुए पकाएं। आपको इन्हें भूरा नहीं करना, बस
नरम करना है। इससे गाजर की
मिठास और
बढ़ जाती है।
चौथा
कदम: इमली तैयार करना (अगर इमली इस्तेमाल कर रहे हैं)
जब गाजर पक
रही हो,
तो एक
छोटी सी
इमली गुठली निकालकर ¼ कप
गर्म पानी में भिगो दें। फिर इसे अच्छी तरह मसलकर गूदा बना लें और
छान लें। (अगर नींबू का
रस इस्तेमाल कर
रहे हैं, तो
यह कदम छोड़ दें)।
पांचवां
कदम: सब कुछ पीस लेना
भुनी हुई दाल और
पकी हुई गाजर को
थोड़ा ठंडा होने दें। फिर इन्हें मिक्सी के
जार में डालें। इसमें इमली का
गूदा (या
नींबू का
रस), नमक और
2-3 बड़े चम्मच पानी डाल दें।
अब मिक्सी चला दें! तब
तक पीसें जब
तक एक
चिकना पेस्ट न
बन जाए। जरूरत पड़ने पर
थोड़ा और
पानी डाल सकते हैं। चटनी गाढ़ी और
स्मूद बननी चाहिए।
छठा
कदम: आखिरी जादू - तड़का लगाना
यह वह
कदम है
जो चटनी के
स्वाद को
आसमान पर
पहुंचा देता है।
- एक
छोटी कड़ाही में एक बड़ा चम्मच तेल गरम करें।
- तेल
गरम होने पर उसमें राई डालें। जब राई चटकने लगे, तो इसमें करी पत्ते और एक चुटकी हींग डाल दें।
- करी
पत्ते के कुरकुरे होते ही (लगभग 10 सेकंड), यह सारा सizzling तेल तैयार चटनी के ऊपर डाल दें। आपको एक तेज सी आवाज सुनाई देगी, यही इसकी असली पहचान है!
सातवां
कदम: मिलाएं और परोसें!
चटनी को
अच्छी तरह चलाएं ताकि तड़का अच्छे से
मिल जाए।
एक बार चखकर देख लें, अगर जरूरत हो
तो नमक या
नींबू डाल सकते हैं। अगर चटनी ज्यादा गाढ़ी लगे तो
थोड़ा पानी मिला सकते हैं।
