Carrot Halwa
Key Ingredients
- Carrots - You'll need about 1 kilogram
(about 2 pounds). The best carrots for halwa are the red ones, often
called "Delhi carrots." They are sweeter, juicier, and give that
classic deep red colour. If you can't find them, the regular orange ones
work just fine too.
- The
Richness: Full-Fat Milk -
1 litre. This is not the time for skimmed milk. We need the fat for that
creamy, luxurious texture.
- The
Sweetness: Sugar -
About ¾ to 1 cup. Start with ¾ cup, you can always add more later
depending on how sweet your carrots are.
- The Magic of
Aroma: Ghee (Clarified Butter) -
½ cup. This is the soul of the halwa. It adds an incredible, nutty
fragrance that oil just can't match.
- The Flavour
Boosters:
ü Cardamom Powder - From 4-5 green cardamom pods, crushed.
This is the signature spice.
ü A Handful of Nuts - Cashews, almonds, and pistachios,
chopped. For that lovely crunch and richness.
ü Raisins (Optional) - A small handful, if you like little
bursts of sweetness.
The
Cozy Step-by-Step Process
Imagine
we're in the kitchen together. I'll walk you through it.
Step 1: The Grand
Carrot Prep
Wash and peel all the carrots. Now, for grating. You can use a food processor
to make it quick, but grating by hand with a box grater gives you a wonderful, slightly
textured feel. The key here is to use the thickest grater holes you have. Thin,
mushy gratings will disappear in the milk. We want to taste the carrot.
Step 2: The Slow
and Steady Simmer
Take a heavy-bottomed pot or a kadhai. A thick base is important so the milk
doesn't burn. Pour in the entire litre of milk and add all your grated carrots.
Turn the heat to medium-high and bring it to a boil.
Once
it starts bubbling, reduce the heat to a gentle, happy simmer. Now, patience is
your best friend. Let this cook for about 30-45 minutes. Stir it occasionally,
maybe while you're listening to some music. You'll see the milk slowly
reducing, and the carrots becoming softer and cooking in its creaminess. The
mixture will thicken significantly.
Step 3: The Sweet
Transformation
When most of the milk has been absorbed and the mixture looks thick, it's time
for the sugar. Add the sugar (start with ¾ cup) and stir well. As soon as you
add sugar, the halwa will become watery again as the sugar melts. That's
completely normal! Just keep cooking and stirring on a medium flame for another
10-15 minutes until it thickens up beautifully again.
Step 4: The Ghee
& Nut Magic
Now, push the halwa to one side of the pan. On the empty side, add 2
tablespoons of ghee. Toss in your nuts and raisins. Let them sizzle and become
golden and fragrant. This process of frying the nuts in ghee right in the same
pan is called "tempering" and it infuses the entire dish with that
incredible flavour.
Mix
everything together—the nuts, the ghee, and the halwa.
Step 5: The Final
Sizzle (The Secret Step!)
This is what takes halwa from good to "oh-my-goodness." Add the
remaining ghee. Yes, all of it. Let the halwa sizzle and fry in this ghee for
5-7 minutes on a medium-low heat. You need to stir continuously now. You'll
know it's ready when the halwa starts to leave the sides of the pan and
glisten, and you'll smell a deep, caramelized, nutty aroma. This step is
non-negotiable for the best flavour.
Step 6: The
Fragrant Finish
Turn off the heat. Now, sprinkle the fragrant cardamom powder over the halwa
and give it one final mix. The residual heat will wake up all the aromas in the
cardamom.
Serving
Your Masterpiece
You
can eat it piping hot—it's divine. Or, you can let it cool down. It thickens as
it cools. Many people (including me) think it tastes even better the next day
because the flavours have had time to get to know each other.
Serve
it in a bowl, garnished with a few more slivered pistachios. It's a taste of
pure comfort and joy, made by you.

का
हलवा
आवश्यक सामग्री
गाजर का
हलवा बनाने के
लिए हमें चाहिए:
- गाजर -
1 किलोग्राम (लगभग)। सबसे अच्छा रिजल्ट देती हैं लाल रंग वाली दिल्ली वाली गाजर। वो ज्यादा मीठी और रसीली होती हैं और हलवे को खूबसूरत लाल रंग देती हैं। अगर नहीं मिलें तो साधारण नारंगी गाजर से भी काम चल जाएगा।
- क्रीमिनेस के लिए: फुल क्रीम दूध - 1 लीटर। यहाँ लाइट या टोंड दूध का इस्तेमाल नहीं चलेगा। हलवे में मलाई जैसा टेक्सचर इसी दूध से आएगा।
- मिठास के लिए: चीनी - ¾ से 1 कप (कप का साइज 200 ml का मानिए)। ¾ कप से शुरुआत करें, बाद में गाजर की मिठास देखकर और डाल सकते हैं।
- देसी घी - ½ कप।
यह हलवे की आत्मा है। इसकी खुशबू हलवे का स्वाद ही बदल देती है।
- सुगंध और क्रंच के लिए:
ü इलायची पाउडर - 4-5 हरी इलायची के
दाने निकालकर, कूट लें।
ü मेवे - काजू, बादाम, पिस्ता, बारीक कटे हुए। हलवे में रंगत और
क्रंच के
लिए।
ü किशमिश (वैकल्पिक) -
थोड़ी सी,
अगर आपको उसका हल्का सा

अब बनाने का तरीका, बिल्कुल आसान
सोचिए जैसे हम
दोनों किचन में साथ-साथ खड़े हैं। ध्यान से
पढ़िए और
बनाइए।
स्टेप
1: गाजर की तैयारी (सबसे जरूरी कदम)
सबसे पहले गाजर को
अच्छी तरह धो
लें और
छील लें। अब
इन्हें कद्दूकस करना है। आप
फूड प्रोसेसर का
इस्तेमाल कर
सकते हैं, लेकिन हाथ से
कद्दूकस करने पर
हलवे का
टेक्सचर बहुत अच्छा आता है। एक
बात का
खास ख्याल रखें: कद्दूकस के
मोटे वाले साइड का
ही इस्तेमाल करें। बारीक कसी हुई गाजर दूध में घुलकर गायब हो
जाती है,
हमें तो
गाजर के
टुकड़ों का
स्वाद चाहिए।
स्टेप
2: दूध और गाजर की जोड़ी (धैर्य का वक्त)
एक भारी तले की
कड़ाही या
पैन लें। मोटा तला होने से
दूध जलता नहीं है। इसमें पूरा एक
लीटर दूध और
सारी कसी हुई गाजर डाल दें। गैस को
मध्यम आँच पर
चढ़ाएं और
दूध को
एक उबाल आने दें।
उबलने के
बाद, आँच को
हल्की कर
दें, ताकि यह
धीरे-धीरे खदबदाए। अब
जरूरत है
आपके धैर्य की। इसे लगभग 30-45 मिनट तक
ऐसे ही
पकने दें। बीच-बीच में चलाते रहें, शायद कोई गाना सुनते हुए। आप
देखेंगे कि
दूध धीरे-धीरे कम
हो रहा है
और गाजर नरम होकर दूध की
क्रीमिनेस में समा रही हैं। मिश्रण काफी गाढ़ा हो
जाएगा।
स्टेप
3: चीनी की मिठास (हलवे का रूप)
जब दूध लगभग पूरी तरह सूख जाए और
मिश्रण गाढ़ा लगने लगे, तो
चीनी डालने का
वक्त आ
गया है। चीनी डालकर अच्छी तरह चलाएँ। जैसे ही
आप चीनी डालेंगे, हलवा फिर से
थोड़ा पतला हो
जाएगा, क्योंकि चीनी पिघलकर रस
छोड़ेगी। यह
बिल्कुल नॉर्मल है। अब
मध्यम आँच पर
लगातार चलाते हुए इसे 10-15 मिनट तक
और पकाएं, जब
तक यह
फिर से
गाढ़ा न
हो जाए।
स्टेप
4: घी और मेवों की महक (दिल खुश कर देने वाला स्टेप)
अब हलवे को
कड़ाही के
एक तरफ सरका दें। खाली जगह में 2 बड़े चम्मच घी
डालें। इसमें अपने सारे मेवे और
किशमिश डाल दें। इन्हें तब
तक भूनें जब
तक काजू सुनहरे और
किशमिश फूल न
जाएँ। इसी प्रक्रिया को
'तड़का लगाना' कहते हैं और
इसी से
पूरे हलवे में जान आ
जाती है।
अब
सब कुछ – मेवे, घी
और हलवा – सबको एक
साथ मिला दें।
स्टेप
5: आखिरी भूनाई (सीक्रेट स्टेप!)
यही वह
स्टेप है
जो हलवे को
अच्छे से
'बेहतरीन' बनाता है। बचा हुआ सारा घी
हलवे में डाल दें। हाँ, सारा का
सारा। अब
हलवे को
इस घी
में मध्यम-धीमी आँच पर
5-7 मिनट तक
खूब चलाते हुए भूनें। आपको लगातार चलाना है। जब
हलवा कड़ाही के
किनारों से
छूटने लगे, चमकने लगे और
एक गहरी, कारमेल जैसी खुशबू आने लगे, तो
समझ जाइए कि
हलवा तैयार है। बेहतरीन स्वाद के
लिए यह
स्टेप बहुत जरूरी है।
स्टेप
6: आखिरी जान (इलायची की खुशबू)
गैस बंद कर
दें। अब
कूटी हुई इलायची पाउडर हलवे के
ऊपर छिड़कें और
एक आखिरी बार अच्छी तरह मिला लें। बची हुई गर्मी इलायची की
खुशबू को
पूरे हलवे में फैला देगी।
हलवा परोसिए और जी भर के खाइए
आप
इसे गर्मागर्म परोस सकते हैं। या
फिर इसे ठंडा होने दें। ठंडा होने पर
यह और
गाढ़ा हो
जाता है। ज्यादातर लोगों (मैं भी
included) का मानना है
कि अगले दिन यह
और भी
स्वादिष्ट लगता है
क्योंकि सारे फ्लेवर्स को
आपस में मिलने का
वक्त मिल जाता है।
