Think
of this as a way to enjoy your regular paratha, but with a delicious, hidden
surprise inside. The carrots make the parathas incredibly soft, add a gentle
sweetness, and turn them a beautiful, warm color. They're perfect for breakfast,
lunch, or even a quick snack.

- Whole Wheat
Flour (2 cups): This
is our base. It's hearty, healthy, and gives the paratha its classic,

Make Carrot Paratha: A Step-by-Step Walkthrough
Step 1: Get Your
Carrots Ready
Start by giving your carrots a good wash and a peel. Then, grab your box grater
and grate them on the side with the medium-sized holes. You don't want them too
fine (or they'll turn mushy) or too thick (or they won't cook properly). Just
nice, shreddy gratings.
Step 2: Make the
Dough (This is the most important part!)
Take a large mixing bowl and add the whole wheat flour. Now, here's the trick:
instead of adding water, we'll use the moisture from the carrots.
Add
the grated carrots, chopped coriander, all the spices (red chili powder,
turmeric, garam masala), ajwain, and salt directly into the flour.
Now,
use your fingers to mix everything together. Rub the flour and carrots between
your palms. You'll see the flour start to pick up the color and moisture from
the carrots. After a couple of minutes, try pressing a handful of the mixture.
It should loosely hold together.
- If it feels
too dry and
isn't coming together, sprinkle just a tablespoon or two of water.
- If it feels
perfect and a bit sticky, that's
okay! The carrots will release more water as they sit.
Knead
it for 5-7 minutes until you have a soft, smooth, and pliable dough. It should
feel softer than your regular chapati dough. Cover it with a damp cloth and let
it rest for at least 20 minutes. This rest makes the dough more relaxed and
easier to roll out.
Step 3: Shape and
Stuff the Parathas (Don't worry, it's easy!)
After the dough has rested, it will be even softer. Give it a quick knead for
30 seconds.
- Pinch off a
lemon-sized ball of dough.
- Roll it
between your palms to make a smooth ball.
- Dip this
ball into some dry wheat flour to prevent sticking.
- Using a
rolling pin, gently roll it out on a floured surface into a small circle,
about 4-5 inches in diameter. It doesn't have to be perfect!
And
that's it! For this simple version, the filling is already mixed into the dough.
So you've just made a "stuffed" paratha without the fuss of actually
stuffing it!
Step 4: Cook the
Paratha to Perfection
Heat a tawa or a flat skillet over medium heat.
- Once the
tawa is hot, place your rolled-out paratha on it.
- Let it cook
for about 30-40 seconds. You'll see bubbles starting to form on the top
surface and the bottom will have light brown spots.
- Flip it
over. Now, cook the other side for another 30 seconds until it has brown
spots too.
- Now, flip it
again. This is the time for the final cook.
- Drizzle
about ½ a teaspoon of ghee or oil around the edges. Press down gently with
your spatula – this helps it cook evenly and get crispy.
- Flip once
more and add a little more ghee/oil to the other side.
- Keep
pressing and cooking until both sides are golden brown and have those
lovely, crisp spots.
Step 5: Serve and
Enjoy!
Take the hot, flaky paratha off the tawa and place it in a casserole or
directly on a plate. The best way to keep them soft is to stack them on top of
each other, which traps the steam.
Serve
them immediately with a
dollop of cold yogurt, a spoonful of pickle, or a pat of fresh butter. They are
so flavorful that they taste amazing even on their own!

बाद, मिश्रण को
हाथ में लेकर दबा कर
देखें, यह
एक साथ आने लगना चाहिए।
- अगर आटा बहुत सूखा लगे और एक साथ न आए, तो एक-दो बड़े चम्मच पानी छिड़क दें।

थोड़ा ज्यादा नरम होना चाहिए। आटे को
एक नम
कपड़े से
ढककर कम
से कम
20 मिनट के
लिए आराम दें। यह
आराम का
वक्त आटे को
रिलैक्स करके बेलने में आसान बनाता है।
तीसरा
कदम: पराठे को बेलना (चिंता की कोई बात नहीं!)
20 मिनट बाद आटा और
भी नरम होगा। उसे फिर से
30 सेकंड तक
गूंथ लें।
- आटे
में से एक नींबू के बराबर का एक गोला लें।
- उसे
अपनी हथेलियों में लेकर गोल और चिकना बना लें।
- इस
गोले को सूखे आटे में हल्का सा डुबो कर चारों तरफ से लगा लें।
- अब
इसे एक सूखे स्थान पर बेलन की मदद से 4-5 इंच के गोल आकार में बेल लें। गोल आकार एकदम परफेक्ट होना ज़रूरी नहीं है!

बस! इस
आसान विधि में स्टफिंग तो
पहले से
ही आटे में मिल चुकी है। इस
तरह आपने बिना किसी झंझट के
पराठे तैयार कर
लिए!
चौथा
कदम: पराठे को सेकना
एक तवा को
मध्यम आंच पर
गरम होने के
लिए रख
दें।
- तवा
गरम हो जाने पर, बेला हुआ पराठा उस पर रख दें।
- इसे
लगभग 30-40 सेकंड तक पकने दें। आप देखेंगे कि ऊपर बुलबुले बनने शुरू हो जाएंगे और नीचे की साइड पर हल्के भूरे धब्बे आ जाएंगे।
- अब
पराठे को पलट दें। दूसरी साइड को भी 30 सेकंड तक पकने दें।
- फिर
से पलटें। अब इसकी आखिरी सेक का वक्त है।
- पराठे
के किनारों पर लगभग आधा छोटा चम्मच घी या तेल डाल दें। कड़छी से हल्का-हल्का दबाएं - इससे पराठा समान रूप से पकेगा और कुरकुरा होगा।
- एक
बार फिर पलटें और दूसरी तरफ भी थोड़ा घी या तेल डाल दें।
- दबाते
हुए तब तक सेकें जब तक दोनों तरफ सुनहरे भूरे रंग के क्रिस्पी धब्बे न आ जाएं।
पांचवां
कदम: सर्व करें और आनंद लें!
गरमागरम पराठे को
तवे से
उतार कर
एक कढ़ाई में या
सीधे प्लेट में रख
दें। इन्हें नरम रखने का
सबसे अच्छा तरीका है
कि उन्हें एक-दूसरे के
ऊपर स्टैक करके रखें, इससे भाप अंदर ही
रहती है।
इन्हें तुरंत सर्व करें ठंडी दही, आचार या
ताजे मक्खन के
साथ। ये
इतने स्वादिष्ट होते हैं कि
बिना किसी चीज के
भी अच्छे लगते हैं!
कुछ छोटे-छोटे टिप्स:
- अगर
बेलते समय आटा चिपकने लगे, तो बस थोड़ा सूखा आटा और इस्तेमाल कर लें।
- नरम
पराठे का राज है नरम आटा और आटे को आराम देने का वक्त।
- हमेशा
मध्यम आंच पर ही सेकें - आंच तेज होगी तो पराठा बाहर से जल जाएगा और अंदर से कच्चा रह जाएगा।
