Sambar

What

- For the
Lentils (The Heart of the Sambar):
- ½ cup tuvar
dal (split pigeon peas)
- 1½ cups
water for pressure cooking
- ¼ teaspoon
turmeric powder
- The
Vegetables & Tamarind:
- 2 medium
carrots, peeled and cut into thick rounds or chunks
- 1 small
lemon-sized ball of tamarind, soaked in ½ cup warm water (OR 1.5
tablespoons of ready-made tamarind paste)
- 1 small
onion, roughly chopped (optional)
- 1 small
tomato, chopped (optional)
- The Sambar
Powder (The Soul):
- 2
tablespoons ready-made sambar powder (like MTR or Eastern)
- ½ teaspoon
turmeric powder
- The
Tempering (The Grand Finale):
- 2
tablespoons coconut oil or any cooking oil
- 1 teaspoon
mustard seeds
- ½ teaspoon
cumin seeds
- 1 pinch of
asafoetida (hing)
- 2 dry red
chilies
- 10-12 fresh
curry leaves
- A handful
of fresh coriander leaves, chopped

Step
1: Cook the Dal (The Foundation)
- Rinse the
tuvar dal in water until the water runs clear.
- Add it to a
pressure cooker with 1.5 cups of water and ¼ teaspoon of turmeric.
- Pressure
cook for about 4-5 whistles, or until the dal is completely soft and
mushy. If you don't have a pressure cooker, you can boil it in a pot with
more water until it's very tender (this will take about 30-40 minutes).
- Once cooked,
mash the dal well with a spoon or whisk until it's smooth and creamy. Set
this aside.
Step
2: Prepare the Tamarind Juice (The Tang)
- If you're
using a tamarind ball, take the soaked tamarind and squeeze it with your
fingers in the warm water until the water turns thick and brown. Discard
the pulp and seeds. You should have about ½ cup of thick tamarind juice.
- If you're
using tamarind paste, simply mix it with ½ cup of water.
Step
3: Cook the Vegetables and Build the Broth
- In a large
pot, combine your carrot chunks, the chopped onion and tomato (if using),
the tamarind juice, and about 2 cups of water.
- Add the
sambar powder and ½ teaspoon of turmeric to this pot.
- Bring this
to a boil, then reduce the heat and let it simmer for about 10-12 minutes,
or until the carrots are tender but not mushy.
Step
4: The Big Union
- Now, gently
add the mashed dal to the pot with the vegetable-tamarind broth.
- Add salt to
taste. Stir everything together gently. If the sambar looks too thick, you
can add a little more hot water until it reaches your preferred
consistency (it should be like a hearty soup).
- Let this
simmer together on low heat for another 5-7 minutes. This is when the
flavors truly marry. Give it a taste and adjust the salt if needed.
Step
5: The Tempering - The Magic Touch
- This is the
step that makes the whole kitchen smell incredible and elevates the sambar
to another level.
- In a small
tempering pan or a little ladle, heat the coconut oil over medium heat.
- Add the
mustard seeds and let them pop and dance around.
- Then, add
the cumin seeds, dry red chilies, asafoetida, and the curry leaves. They
will sizzle and crackle wonderfully. Be careful, as the oil might splatter
a little. Let this cook for just 20 seconds until the curry leaves are
crisp and the red chilies darken a bit.
- Immediately,
pour this sizzling oil with all the spices directly into the big pot of
sambar. It will let out a fantastic sizzzzle sound.
Step
6: The Final Touch
- Turn off the
heat. Stir in most of your fresh coriander leaves, saving a little for
garnish.
To
Serve
Ladle
the hot sambar into bowls. Garnish with the remaining coriander.
- This is
absolute heaven poured over a mound of steamed rice with a dollop of ghee.
- It's also
the perfect companion for idli, dosa, or vada.

स्टेप 1: दाल को पकाएँ (बुनियाद तैयार करें)

दाल को तब तक धोएँ जब तक पानी साफ न दिखने लगे।

४-५ सीटी आने तक पकाएँ, या जब तक दाल पूरी तरह नरम और मसहरी न हो जाए। अगर प्रेशर कुकर नहीं है, तो इसे एक बर्तन में ज्यादा पानी डालकर तब तक उबालें जब तक यह बिल्कुल नरम न हो जाए (इसमें लगभग ३०-४० मिनट लगेंगे)।
- दाल
के पक जाने के बाद, इसे एक चम्मच या फेंटनी से अच्छी तरह मसल लें जब तक कि यह चिकनी और क्रीमी न हो जाए। फिर इसे एक तरफ रख दें।
स्टेप 2: इमली का पानी तैयार करें (खटास के लिए)
- अगर
आप इमली का गोला इस्तेमाल कर रहे हैं, तो भीगी हुई इमली को गर्म पानी में अपनी उँगलियों से तब तक मसलें जब तक पानी गाढ़ा और भूरा न हो जाए। गूदे और बीजों को फेंक दें। आपके पास लगभग ½ कप गाढ़ा इमली का पानी होना चाहिए।
- अगर
आप इमली का पेस्ट इस्तेमाल कर रहे हैं, तो बस इसे ½ कप पानी में घोल लें।
स्टेप 3: सब्जियाँ पकाएँ और सांभर का ढाँचा तैयार करें
- एक
बड़े बर्तन में, गाजर के टुकड़े, कटा हुआ प्याज और टमाटर (अगर इस्तेमाल कर रहे हैं), इमली का पानी, और लगभग २ कप पानी डाल दें।
- अब
इसमें सांभर पाउडर और ½ छोटा चम्मच हल्दी पाउडर डाल दें।
- इसे
उबाल लाएँ, फिर आँच धीमी कर दें और इसे लगभग १०-१२ मिनट तक उबलने दें, या जब तक गाजर नरम न हो जाए (बहुत ज्यादा नरम नहीं)।
स्टेप 4: सब कुछ एक साथ मिलाएँ
- अब,
सब्जी वाले इमली के मिश्रण में मसली हुई दाल धीरे से डाल दें।
- स्वादानुसार नमक
डालें। सब कुछ धीरे से मिला लें। अगर सांभर बहुत गाढ़ी लगे, तो आप इसमें अपनी पसंद का गाढ़ापन लाने के लिए थोड़ा और गर्म पानी मिला सकते हैं (यह एक हार्टी सूप जैसी consistency की होनी चाहिए)।
- इसे
धीमी आँच पर एक और ५-७ मिनट तक उबलने दें। यही वह समय है जब सभी स्वाद एक-दूसरे में अच्छे से घुल-मिल जाते हैं। एक चम्मच चखकर देखें और जरूरत हो तो नमक ठीक कर लें।
स्टेप 5: तड़का लगाएँ - जादू की छड़ी घुमाएँ
- यह
वह चरण है जो पूरी रसोई में जबरदस्त खुशबू फैला देता है और सांभर के स्वाद को एक अलग ही स्तर पर ले जाता है।
- एक
छोटी कड़ाही या एक चमचे में, मध्यम आँच पर नारियल का तेल गर्म करें।
- उसमें
राई डाल दें और उन्हें फूटने दें।
- फिर,
इसमें जीरा, सूखी लाल मिर्च, हींग, और करी पत्तियाँ डाल दें। यह जोरदार तड़क-भड़क के साथ छनने लगेंगी। सावधान रहें, तेल थोड़ा उछल सकता है। इसे सिर्फ २० सेकंड तक तब तक पकाएँ जब तक करी पत्तियाँ कुरकुरी न हो जाएँ और लाल मिर्च का रंग थोड़ा गहरा न हो जाए।
- तुरंत,
यह सीटी बजाता हुआ तेल और सारे मसाले सीधे सांभर वाले बड़े बर्तन में डाल दें। एक जबरदस्त सिस्स्स की आवाज आएगी।
स्टेप 6: आखिरी स्पर्श
- गैस
बंद कर दें। इसमें अपनी ज्यादातर ताजी धनिया पत्ती मिला दें, थोड़ी सी ऊपर से सजाने के लिए बचा लें।
परोसने का तरीका
गर्म सांभर को
कटोरियों में डालें। ऊपर से
बची हुई धनिया पत्ती से
सजाएँ।
- यह
उबले हुए चावल के ढेर पर डालकर और थोड़ा सा घी डालकर खाने में बहुत ही स्वर्गिक लगती है।
- यह
इडली, डोसा या वड़ा के साथ भी परफेक्ट कॉम्पेनियन है।
