Part 1: The Dough - Our Soft Foundation

Step 1: Bring the Dough Together

  • In a large mixing bowl, combine the whole wheat flour and a pinch of salt. Give it a quick mix.
  • Add the tablespoon of oil. Rub it into the flour with your fingertips until the mixture looks a bit like breadcrumbs. This little step makes the parathas wonderfully soft.
  • Now, slowly add water, little by little, and start mixing. Use one hand to mix and the other to pour. Stop adding water when the flour comes together into a rough ball.

Step 2: Knead to Perfection

  • Now, dust a clean surface with a little flour and knead the dough for 5-7 minutes. Fold it, push it, and turn it. You're looking for a soft, smooth, and pliable dough—like a baby's cheek!
  • Once it's soft and smooth, rub a few drops of oil all over the dough ball. This keeps it from drying out. Cover it with a damp cloth and let it rest for at least 20-30 minutes. This rest is magical—it makes the dough relaxed and easy to roll.

Part 2: The Filling - The Flavorful Heart

Step 3: Cook the Carrot Filling

  • While the dough is resting, let's make the filling. Heat 1 tablespoon of oil in a pan over medium heat.
  • Add the cumin seeds and let them sizzle for a few seconds.
  • Now, add the grated carrots, grated ginger, and green chili. Stir everything together.
  • Cook this for 3-4 minutes. The carrots will soften slightly and become fragrant. We're not looking to make them mushy, just to cook out the raw taste.
  • Turn off the heat. Add the red chili powder, garam masala, dry mango powder (or lemon juice), salt, and fresh coriander. Mix well.
  • Let this filling cool down completely. A warm filling will make the dough sticky and hard to handle.

Part 3: The Grand Finale - Stuffing & Cooking

Step 4: Assemble the Parathas

  • Once the dough has rested and the filling is cool, we're ready to assemble.
  • Divide the dough into equal-sized lemon-sized balls. Do the same with the carrot filling, making slightly smaller balls.
  • Take one dough ball and flatten it between your palms. Using your fingers, gently press the edges to create a small bowl shape.
  • Place one ball of the carrot filling in the center of this dough bowl.
  • Now, bring the edges of the dough up and over the filling, like you're wrapping a precious gift. Pinch the edges together at the top to seal it completely. Gently roll it in your hands to make a smooth ball again. Make sure there are no cracks. Repeat for all the dough balls.

Step 5: Roll it Out with Love

  • Lightly dust your rolling surface with flour. Take one stuffed ball and gently flatten it with your palm.
  • Now, using a rolling pin, start rolling it out gently, from the center outwards. Be gentle and patient. Your goal is a circle about 6-7 inches in diameter. If a little filling peeks out, dust a little flour on it.

Step 6: Cook to Golden Bliss

  • Heat a tava or griddle over medium heat.
  • Carefully place the rolled paratha on the hot tava. Let it cook for about 30-40 seconds. You'll see bubbles starting to form on the top surface.
  • Flip it over. Let the other side cook for another 30 seconds.
  • Now, add about ½ teaspoon of ghee, butter, or oil around the edges. Flip again and press gently with a spatula. This helps it cook evenly and get those lovely golden-brown spots.
  • Keep flipping and pressing until both sides are cooked to a perfect golden brown with some darker spots.

To Serve

Serve these hot, straight off the tava! They are a complete meal in themselves.

  • Pair them with a dollop of fresh yogurt, a spoonful of pickle, or a pat of cold butter melting on top.
  • For a bigger meal, you can serve them with a simple dal or a bowl of raita.

सोचिए एक मुलायम, गर्मागर्म आटे के पराठे के अंदर मीठी, मसालेदार और हल्की चटपटी गाजर की भरवां... हर कौर कार्ब्स और स्वाद का एक बेहतरीन मेल है। यह सुनने में भले ही खास लगे, लेकिन असल में यह तो एक भरवां रोटी ही है जो नाश्ते, लंच या डिनर किसी के लिए भी परफेक्ट है। चलिए, आस्तीन चढ़ाकर कुछ बनाते हैं!

आपको क्या-क्या चाहिए (सामग्री):

आटे के लिए (बाहरी परत):

  • कप गेहूं का आटा
  • चुटकी नमक
  • बड़ा चम्मच तेल या घी
  • गूंथने के लिए पानी (लगभग ¾ कप)

गाजर की भरवां के लिए (अंदर का स्वाद):

  • कप बारीक कद्दूकस की हुई गाजर (लगभग - मध्यम गाजर)

  • ½ छोटा चम्मच जीरा
  • ½ छोटा चम्मच लाल मिर्च पाउडर
  • ½ छोटा चम्मच गरम मसाला
  • ½ छोटा चम्मच अमचूर पाउडर या नींबू का रस
  • स्वादानुसार नमक
  • बड़ा चम्मच तेल

  • अब, थोड़ा-थोड़ा करके पानी डालें और मिलाना शुरू करें। एक हाथ से मिलाएँ और दूसरे से पानी डालें। पानी डालना तब बंद कर दें जब आटा एक साथ इकट्ठा होकर एक गठरी सा बन जाए।

स्टेप 2: आटा गूंथ लें

  • अब एक साफ सतह पर थोड़ा आटा छिड़क कर आटे को - मिनट तक अच्छी तरह गूंथ लें। उसे मोड़ें, दबाएँ और फिर से गूंथें। आपको एक नरम, चिकना और लचीला आटा तैयार करना है- बिल्कुल बच्चे के गाल जैसा!
  • एक बार आटा तैयार हो जाने पर, आटे की लोई पर चारों ओर थोड़ा सा तेल लगा दें। इससे यह सूखेगा नहीं। अब इसे एक गीले कपड़े से ढककर कम से कम २०-३० मिनट के लिए आराम दें। यह आराम का वक्त जादूई है- इससे आटा रिलैक्स हो जाता है और रोल करने में आसान हो जाता है।

भाग 2: भरवां तैयार करना - दिल की बात

स्टेप 3: गाजर की भरवां बनाएँ

  • जब आटा आराम कर रहा हो, तब भरवां बना लेते हैं। एक कढ़ाई में मध्यम आँच पर बड़ा चम्मच तेल गर्म करें।
  • इसमें जीरा डालकर चटकने दें।
  • अब, इसमें कद्दूकस की हुई गाजर, कद्दूकस किया अदरक और हरी मिर्च डाल दें। सब कुछ अच्छी तरह मिला लें।
  • इसे - मिनट तक पकाएँ। गाजर हल्की नरम हो जाएगी और खुशबू आने लगेगी। हमें इसे बहुत ज्यादा नरम या गलाना नहीं है, बस कच्चापन दूर करना है।
  • गैस बंद कर दें। इसमें लाल मिर्च पाउडर, गरम मसाला, अमचूर पाउडर (या नींबू का रस), नमक और ताजा धनिया डालकर अच्छी तरह मिला लें।
  • इस भरवां को पूरी तरह ठंडा होने दें। गर्म भरवां आटे को चिपचिपा बना देगी और काम करने में मुश्किल होगी।

भाग 3: आखिरी चरण - भरना और सेकना

स्टेप 4: पराठों को भरें और बेलें

  • एक बार आटा और भरवां दोनों तैयार हो जाएँ, तो हम पराठे बनाने के लिए तैयार हैं।
  • आटे और गाजर की भरवां को अलग-अलग समान साइज की गोलियों (लगभग नींबू के आकार) में बाँट लें। भरवां की गोलियाँ आटे की गोलियों से थोड़ी छोटी होनी चाहिए।
  • एक आटे की गोली लेकर उसे अपनी हथेलियों से थोड़ा चपटा कर लें। अपनी उँगलियों से किनारों को दबाकर एक छोटा कटोरा जैसा आकार बना लें।
  • इस आटे के कटोरे के बीच में गाजर की भरवां की एक गोली रख दें।
  • अब, आटे के किनारों को ऊपर की ओर भरवां पर इकट्ठा करें, जैसे आप कोई कीमती चीज़ लपेट रहे हों। ऊपर के किनारों को अच्छी तरह दबाकर बंद कर लें। इसे हल्के से हाथों में लुढ़काकर फिर से एक चिकनी गोली बना लें। ध्यान रहे कहीं कोई दरार रह जाए।

स्टेप 5: पराठों को बेलें

  • अपनी बेलन सतह पर हल्का सा आटा छिड़क लें। एक भरी हुई गोली लेकर हथेली से हल्का सा दबाकर चपटा कर लें।
  • अब, बेलन की मदद से धीरे-धीरे, बीच से किनारों की ओर बेलना शुरू करें। कोमलता और धैर्य से काम लें। आपका लक्ष्य लगभग - इंच का एक गोल पराठा बेलना है। अगर भरवां थोड़ी बाहर दिखे, तो उस पर थोड़ा सा आटा छिड़क दें।

स्टेप 6: सुनहरे पराठे सेकें

  • एक तवा को मध्यम आँच पर गर्म कर लें।
  • बेले हुए पराठे को carefully गर्म तवे पर रख दें। इसे लगभग ३०-४० सेकंड तक पकने दें। आप ऊपर बुलबुले बनते देखेंगे।
  • इसे पलट दें। दूसरी side को भी लगभग ३० सेकंड तक पकने दें।

  • तब तक पलटते और दबाते रहें जब तक कि दोनों तरफ सुनहरे भूरे रंग की हो जाएँ।

परोसने का तरीका

इन्हें गर्म-गर्म, सीधे तवे से उतारकर परोसें! यह अपने आप में एक पूरा भोजन है।
