Tomato Chutney Recipe
Making
tomato chutney is like capturing the taste of a spice garden in a jar. It's

Seeds: ½
teaspoon.

Make the Chutney: A Step-by-Step Journey
This
is a forgiving process. We'll cook everything down until it's thick, jammy, and
full of flavor.
Step 1: Get
Everything Ready (The "Mise en Place")
Let's do our prep first. Chop the tomatoes and onion, mince the garlic and
ginger, and get all your spices measured and ready. This makes the cooking part
so much smoother.
Step 2: The
Tempering (The "Tadka" - This is where the magic starts!)
Place a heavy-bottomed pan or kadhai over medium heat. Add the oil.
- If using
mustard oil, let it heat up until it just starts to smoke, then reduce the
heat. This removes the raw smell.
- Add the
mustard seeds. Let them splutter and pop.
- Then, add
the cumin seeds, fennel seeds, fenugreek seeds, and dry red chilies. Swirl
them around for just 20-30 seconds until they become incredibly fragrant.
Be careful not to burn them!
- Add the curry
leaves (if using) – they will crackle dramatically.
Step 3: Sauté the
Aromatics
Immediately add the chopped onion to the pan. Sauté for 4-5 minutes until they
turn soft and translucent.
Now, add the minced garlic, ginger, and green chilies. Sauté for another minute
until the raw smell of the garlic disappears.
Step 4: Spice it
Up
Add the red chili powder and turmeric powder to the pan. Stir quickly for about
10 seconds to "bloom" the spices in the oil. This wakes up their
flavors.
Step 5: Cook the
Tomatoes Down
Now, add all the chopped tomatoes to the pan. Also, add the salt and the
tamarind paste (if using).
Mix everything well. Cook this on a medium-low heat. You'll see the tomatoes
start to break down and release their juices. Let it simmer, stirring occasionally,
for about 15-20 minutes.
You're waiting for the raw taste of the tomato to cook out and for the mixture
to thicken significantly. It should look like a thick, broken-down sauce.
Step 6: Add the
Sweetness
Once the tomato mixture is thick and jammy, add your grated jaggery or brown
sugar. Stir well until it dissolves completely.
Now, let the chutney continue to simmer on low heat for another 10-15 minutes.
Keep stirring occasionally to prevent it from sticking to the bottom. You'll
know it's ready when the oil just starts to separate from the edges of the
chutney and it has a beautiful, glossy, thick consistency – like a loose jam.
Step 7: The Final
Taste Test
Turn off the heat. This is the most important step. Taste your creation!
- Is it tangy
enough? If not, you can stir in a squeeze of fresh lemon juice.
- Is it sweet
enough? Add a bit more jaggery or sugar if needed.
- Does it need
more salt? Adjust now.
Step 8: Cool and
Store
Let the chutney cool down to room temperature. As it cools, it will thicken a
bit more.
Transfer it to a clean, dry, airtight jar. It will keep happily in your
refrigerator for 2-3 weeks.

मसाले खुशबू देने लगें, तो हींग और करी पत्ता डालें।
- अब
तुरंत कटा हुआ प्याज डाल दें और हल्का सुनहरा होने तक भूनें।
चरण 3: अदरक-मिर्च और मसाले डालें
- अब
इसमें कटा हुआ अदरक, हरी मिर्च और लहसुन डालें और 1 मिनट तक भूनें।
- फिर
लाल मिर्च पाउडर और हल्दी पाउडर डालें और तेल में अच्छी तरह भून लें।
चरण 4: टमाटर को पकाएं
- अब
इसमें कटे हुए टमाटर और नमक डालकर अच्छी तरह मिलाएँ।

ढककर मध्यम आंच पर 10-12 मिनट तक पकने दें। बीच-बीच में चलाते रहें।
- टमाटर
तब तक पकाएं जब तक वे पूरी तरह नरम न हो जाएँ और गाढ़े न हो जाएँ।
चरण 5: मिठास और खटास डालें
- जब
टमाटर अच्छी तरह पक जाएँ और पेस्ट जैसे लगने लगें, तो इसमें कद्दूकस किया गुड़ और इमली का पेस्ट डाल दें।
- अच्छी
तरह मिलाएँ और फिर से 5-7 मिनट तक धीमी आंच पर पकाएं।
- चटनी
तैयार है जब तेल ऊपर से अलग दिखने लगे और चटनी का रंग गहरा हो जाए।
चरण 6: आखिरी स्पर्श और स्वाद चेक करें
- गैस
बंद कर दें।

चेक करें:

खटास लगे तो नींबू का रस निचोड़ लें।
- कम
