Onion & Bell Pepper Stir-Fry Recipe
The
Colourful, Crunchy Side Dish
Let’s
be real – sometimes you just need a quick, healthy, and tasty dish that goes
with anything. This onion and bell pepper stir-fry is exactly that.
It’s not one of those complicated restaurant-style dishes. It’s the kind of
simple, homely recipe that you can whip up in 15 minutes when you’re tired but
still want something delicious. It’s all about keeping the veggies crunchy,
colorful, and full of their natural sweetness.
Think
of it as a friendly helping hand for your dal-rice, a perfect partner for
rotis, or even a bright topping for grilled chicken or fish. Let’s get
chopping!
What
You’ll Need (Key Ingredients)
- 2 large
onions: Red or
yellow, cut into thick slices or chunks. We want them to keep some bite.
- 2 large bell
peppers (capsicums): Use
different colours – one red, one green, maybe a yellow if you have it. It
makes the dish look so happy! Cut them into similar-sized pieces as the
onions.
The
Flavour Makers:
- 2-3 cloves
of garlic: Finely
chopped or crushed. The more, the merrier, I say.
- 1-inch piece
of ginger: Finely
chopped or julienned (cut into thin matchsticks).
- 1-2 green
chilies: Slit
lengthwise. This gives a gentle heat without being overpowering.
The
Seasoning & Tempering:
- 1 tablespoon
oil: Any neutral oil like
sunflower or vegetable oil works.
- 1/2 teaspoon
cumin seeds (jeera): For
that lovely, nutty aroma.
- A generous
pinch of salt: To taste.
- 1/2 teaspoon
red chili powder: For
a bit of warmth and colour.
- 1/2 teaspoon
turmeric powder: For
that golden hue and earthiness.
- 1 teaspoon
coriander powder: The
unsung hero that adds depth.
- 1/2 teaspoon
garam masala (optional, but highly recommended): Adds a final fragrant touch.
The
Fresh Finish:
- A small
handful of fresh coriander leaves: Roughly
chopped, for a burst of freshness at the end.
- 1 tablespoon
lemon juice: A
squeeze at the end brightens up all the flavours.
Let’s
Cook! Step-by-Step
Step 1: The Prep
Work (The “Get Ready” Part)
Before you even turn on the stove, get everything ready. It goes fast!
- Chop all
your onions and bell peppers. Keep the pieces biggish – we’re not making a
paste!
- Chop the
garlic, ginger, and slit the green chilies. Have them in a little bowl.
- Measure out
your spices and keep them near the stove.
This way, you won’t be scrambling for something while the garlic is browning.
Step 2: Wake Up
the Oil
Place a wide, heavy-bottomed pan or wok (a kadhai is perfect)
on medium-high heat. Let it get nice and warm. Add the oil.
After about 30 seconds, test the oil by throwing in one cumin seed. If it
sizzles right away, you’re good to go. Add all the cumin seeds and let them
dance and crackle for just 10 seconds.
Step 3: Build the
Base Flavour
Now, add the chopped garlic, ginger, and slit green chilies to the sizzling
cumin. Stir them around constantly for about a minute. You’ll smell this
incredible aroma filling your kitchen. Be careful not to burn the garlic – we
just want it to turn a very light golden.
Step 4: In Go the
Veggies – The Main Event!
Turn the heat up to high. Immediately add all the sliced onions and bell
peppers. Give everything a really good stir, coating the veggies in that
flavoured oil. Now, here’s the secret: let them cook without stirring
too much.
Spread them out in the pan and let them sit for a minute. This allows them to
get a slight char, a little bit of that lovely “wok breath” flavour. Then stir,
and let them sit again for another minute. We want them to be cooked but still
CRUNCHY. They should lose their raw edge but not become mushy. This takes about
5-6 minutes on high heat.
Step 5: The Spice
Shower
Once the veggies are bright in colour and tender-crisp, lower the heat to
medium. Now, sprinkle all the dry spices over them – the turmeric, red chili
powder, coriander powder, and salt. Pouring the spices directly onto the hot
veggies (and not onto the bare pan) prevents them from burning.
Stir-fry vigorously for another minute, until the raw smell of the spices
disappears and they cling beautifully to every piece of onion and pepper.
Step 6: The Final
Magic Touches
Turn off the heat. Now, sprinkle the garam masala (if using) over the top and
give it one final stir. The residual heat will toast it just right.
Squeeze that fresh lemon juice all over and scatter the chopped coriander
leaves.
Step 7: Serve
& Enjoy!
That’s it! You’re done. Transfer it to a serving bowl. The veggies will be
glistening, fragrant, and packed with contrasting textures and flavours.
How
to Eat This (Serving Ideas)
- The Classic
Combo: Serve
it hot alongside simple dal and steamed rice, or with warm rotis/parathas.
- The Filling: Spoon it into a warm pita or
tortilla with some yogurt or hummus for a fantastic wrap.
- The
Sidekick: It’s a
brilliant side dish for grilled paneer, chicken tikka, or even a simple
omelette.
- Just As Is: Honestly, it’s so good you can eat
a small bowl of it on its own!
A
Few Friendly Tips From My Kitchen:
- Don’t Crowd
the Pan: Use a
big enough pan so the veggies can sear, not steam. If you pile them on top
of each other, they’ll release water and get soggy.
- Keep it
Crunchy: The
magic is in the texture. Taste a piece after 5 minutes of cooking – it
should snap, not squish.
- Play with
Flavours: Add a
splash of soy sauce at the end for an Indo-Chinese twist, or throw in some
sesame seeds for extra nuttiness.
This
dish is less about strict rules and more about enjoying the process of cooking
fresh, colourful food quickly. It’s a celebration of simple ingredients. Go on,
give it a try – your weeknight dinners just got a whole lot brighter and easier
