Onion & Cheese Stuffed Paratha Recipe
Okay,
let's be honest. Who doesn't love a paratha? But when you stuff it with sweet,
sautéed onions and melting, gooey cheese, it stops being just breakfast and
becomes a full-blown celebration. This isn't fancy cooking—it's about creating
pure, satisfying comfort in a golden, flaky package. It's the kind of meal that
makes everyone at the table ask for one more.
Think
of it as a grilled cheese and a buttery flatbread had a delicious baby. Let's
make it.
What
You’ll Need (Key Ingredients)
For
the Simple Dough:
- 2 cups whole
wheat flour (atta): This
is your base.
- 1 cup water
(approximately): We'll
add it bit by bit.
- 1 teaspoon
oil or ghee: For a
softer dough.
- ½ teaspoon
salt: Just to season the dough
itself.
For
the Magical Filling:
- 2 large
onions: Finely
chopped. The finer you chop, the easier it is to stuff the paratha.
- 1 cup grated
cheese: Use
something that melts well. A mix is great—try half mozzarella (for the
stretch) and half cheddar or Gouda (for flavour). Even processed cheese
cubes, grated, work perfectly.
- 1 green
chilli: Finely
chopped (optional, but gives a nice little kick).
- 2
tablespoons fresh coriander leaves: Finely
chopped.
- ½ teaspoon
cumin seeds: Trust
me on this.
- ½ teaspoon
dried mango powder (amchur) OR 1 tbsp lemon juice: This is the secret! It cuts through
the richness and brightens everything up.
- ½ teaspoon
red chilli powder (optional)
- Salt to
taste
- 1 tablespoon
oil or ghee: For
cooking the onions.
For
Cooking & Serving:
- Butter,
ghee, or oil: For
roasting the parathas. Butter is highly recommended for that
restaurant-style flavour.
- Cold yoghurt
(curd) or a simple pickle: On
the side, to balance it all out.
Let’s
Cook! Step-by-Step
Step 1: Make the
Dough – The Foundation
In a large bowl, mix the whole wheat flour and salt. Now, start adding water
little by little. Use one hand to mix. You want the dough to come together, but
it shouldn't be sticky. When it starts forming a shaggy ball, add that teaspoon
of oil. Now knead it for a good 5-7 minutes, until it's smooth and soft. Cover
it with a damp cloth and let it relax for at least 20-30 minutes. This rest
makes the dough elastic and easy to roll.
Step 2: Prepare
the Filling – Where the Magic Happens
While the dough rests, let's make the filling. Heat 1 tablespoon of oil or ghee
in a pan on medium heat. Add the cumin seeds and let them sizzle for 5 seconds.
Now, add the finely chopped onions and green chilli. Don't turn the heat up too
high. We want to cook them slowly until they turn soft, translucent, and sweet.
This should take about 6-8 minutes. Stir occasionally. Let this mixture cool
down completely in the pan. This is very important—a hot filling will make the
dough soggy and impossible to handle.
Once cool, transfer it to a bowl. Add the grated cheese, coriander, amchur (or
lemon juice), red chilli powder, and salt. Mix everything gently with a fork.
Your filling is ready! It will look crumbly and cheesy and amazing.
Step
3: Assemble the Paratha – The Fun Part
- Divide: Knead your rested dough for a
minute. Divide it into equal lemon-sized balls. Do the same with your
filling, making slightly smaller balls.
- Make a
Pocket: Take
one dough ball. Flatten it with your palms and, using your fingers, create
a small, thick bowl or "katori" shape in your palm.
- Stuff It: Place one ball of the onion-cheese
filling right into that dough pocket.
- Seal It: Gently bring the edges of the dough
up and over the filling, pinching them together at the top. Make sure it's
completely sealed—no cheese should peek out, or it will leak while
cooking.
- Flatten Gently: Place the sealed ball, pinched-side down, on your rolling surface. Very gently, flatten it with your palm.
Step 4: Roll It
Out – With Care and Love
Dust your surface and the dough lightly with dry flour. Now, roll it out gently
into a circle of about 6-7 inches in diameter. Use even pressure. If you see a
little filling peeking through, dust a bit more flour on that spot. Don't worry
if it's not a perfect circle. That's just proof it's homemade!
Step 5: Cook to
Golden Perfection
Heat a tawa or griddle on medium heat. Once hot, place your rolled paratha on
it.
Let it cook for about 30-40 seconds until you see small bubbles on the top
surface and the bottom has light brown spots.
Flip it. Now, spread about ½ teaspoon of butter or ghee on the top side.
Flip again, so the buttery side is now on the tawa. Spread a little more butter
on this new top side.
Press gently around the edges with your spatula. This encourages even browning
and cooking.
Keep flipping every 30 seconds or so, pressing gently, until both sides are
beautifully golden brown and crisp, with darker spots. You might hear a slight
sizzle from the melting cheese inside. That's the sound of success.
Step 6: Serve
Immediately!
Take the paratha off the tawa and for the best experience, place it directly on
your plate. Optionally, you can give it a quick, gentle smash between your
palms (be careful, it's hot!) to fluff up the layers slightly.
Serve it hot, hot, hot!
How
to Eat This Masterpiece
- Tear off a
piece with your hands. You should see strings of melted cheese pulling
away from the sweet onions.
- Have it with
a big dollop of cold, fresh yoghurt or a spoonful of your favourite pickle
(mango or garlic pickle works wonders).
- It's a
complete meal in itself. No sides needed, just maybe a cup of masala chai.
Golden
Rules & Friendly Tips:
- Cool the
Filling: This
is the most important step. A cold or room-temperature filling is your
best friend.
- Seal
Tightly: A good
seal is the difference between a glorious paratha and a cheesy mess in
your pan.
- Medium Heat
is Key: Too
high, and the outside will burn before the cheese melts. Too low, and the
paratha will become hard.
- The
"Amchur" Trick: That
sour touch (amchur or lemon) is not negotiable. It balances the sweetness
of the onion and the fat of the cheese perfectly.
There
you have it. It might seem like a few steps, but once you get the hang of
stuffing and rolling, it becomes a joyful, almost therapeutic process. And the
reward—a steaming, cheesy, buttery paratha—is worth every single second. Happy
cooking.
