cumin seeds, coriander powder, turmeric, red chili powder, asafoetida, the

- Now, add the
squeezed-dry onions, the chopped cilantro, and green chili (if using) into
the bowl.
Step
3: Bringing It All Together
- Here’s where

any water yet! Just use your fingers to coat every onion strand with the
spiced flour. The natural moisture left in the onions will start to help
it clump together.
- Now, if it
feels too dry and isn't holding together at all, add water one

right away, adjust the heat.
Step
5: Frying the Pakodas to Golden Perfection
- Take a small
portion of the mixture (about a heaping tablespoon) and just drop it
loosely into the hot oil. Don't try to make a perfect ball! The uneven,
