अब, भिंडी के सिरे और नोक वाला हिस्सा काटकर हटा दें। उन्हें लगभग ½ इंच के टुकड़ों में काट लें। कटी हुई भिंडी को एक बड़े कटोरे में रखें और उसमें ½ छोटा चम्मच हल्दी पाउडर और ½ छोटा चम्मच नमक छिड़क दें। अच्छी तरह मिला लें। यह उन्हें और भी कुरकुरा बनाएगा।

 

स्टेप 2: भिंडी को अलग से भूनना (फ्राई करना)


एक बड़ी, गहरी कड़ाही या नॉन-स्टिक पैन में 2 बड़े चम्मच तेल गरम करें। मध्यम-तेज आँच पर कटी हुई भिंडी को एक लेयर में फैलाकर डाल दें। उन्हें बिना ढके भूनें (तलें नहीं, सिर्फ सेकें) उन्हें 7-8 मिनट तक पकने दें, बीच-बीच में हल्का चलाते रहें ताकि सभी तरफ से हल्की क्रिस्पी हो जाए और वे चिपचिपाहट छोड़ना बंद कर दें। जब वे हल्के भूरे रंग की हो जाएँ और कुरकुरी लगने लगें, तो उन्हें कड़ाही से निकालकर एक प्लेट पर फैला दें। अलग रख दें।

 

स्टेप 3: प्याज़ का स्वादिष्ट बेस बनाना


उसी कड़ाही में बचा हुआ तेल रहने दें (अगर ज़्यादा लगे तो थोड़ा निकाल दें) मध्यम आँच पर तेल गरम करें। उसमें हिंग और जीरा डालें और जीरे के चटकने तक पकाएँ।
अबबारीक कटे हुए प्याज़ डाल दें। एक चुटकी नमक डालें (यह प्याज़ को पसीना निकालने में मदद करता है) प्याज़ को तब तक चलाते रहें जब तक वे नरम हो जाएँ और एक सुनहरा-भूरा रंग पकड़ लें। इसमें 8-10 मिनट लगेंगे। धैर्य रखें, यह मिठास पूरी सब्ज़ी का स्वाद बदल देगी।

 

स्टेप 4: मसालों और टमाटर को मिलाना


जब प्याज़ सुनहरे हो जाएँ, तो अदरक-लेहसुन का पेस्ट डालें और 1 मिनट तक भूनें। अब आँच थोड़ी कम करें और बचे हुए हल्दी पाउडर, लाल मिर्च पाउडर, धनिया पाउडर और आमचूर पाउडर डाल दें। सिर्फ 20-30 सेकंड तक भूनें, जब तक कि तेल अलग दिखने लगे।
अब कटा हुआ या प्यूरी किया हुआ टमाटर डाल दें। आँच बढ़ाकर मध्यम कर दें और इस मसाले को तब तक पकाएँ जब तक टमाटर पूरी तरह गल जाए और तेल फिर से किनारों पर अलग दिखने लगे। यह एक गाढ़ा पेस्ट जैसा हो जाना चाहिए।


स्टेप 5: सब कुछ एक साथ मिलाना और पकाना

अब, वह भुनी हुई कुरकुरी भिंडी वापस कड़ाही में डाल दें। सब कुछ बहुत हल्के हाथ से मिलाएँ ताकि भिंडी के टुकड़े टूटे नहीं और हर टुकड़ा मसाले में लिपट जाए।
इसे ढककर सिर्फ 4-5 मिनट के लिए धीमी आँच पर पकने दें। इतना समय काफी है कि भिंडी मसालों का स्वाद ले ले और नरम हो जाए, लेकिन उसकी कुरकुरापन बरकरार रहे। बीच में एक बार हल्का चला लें।


स्टेप 6: आखिरी जादुई टच

गैस बंद कर दें। ऊपर से गरम मसाला छिड़कें और ताज़े कटे हरे धनिये से गार्निश करें। एक छोटा सा राज़: अगर आपने आमचूर नहीं डाला है, तो आखिर में 1 छोटा चम्मच नींबू का रस निचोड़ दें और हल्के से मिला दें। यह स्वाद को एकदम ताज़ा कर देता है।
