  • आसान रास्ता: फूलों को मिक्सी जार में डालें और थोड़ा-थोड़ा करके पल्स मारें, जब तक वह चावल के दानों जैसा दिखने लगे। ज्यादा पीसें, वरना लुगदी बन जाएगी!
  • थोड़ी एक्सरसाइज वाला रास्ता: मोटे छेदों वाली कद्दूकस (ग्रेटर) लें और फूलगोभी के फूल रगड़-रगड़ कर कद्दूकस कर लें। यह भी बिल्कुल सही काम करता है।


स्टेप 2: महत्वपूर्ण पड़ावपानी निचोड़ें (सबसे जरूरी कदम!)

फूलगोभी में जल भरा है। अगर ये पानी निकाला तो गीली लेई बनेगी, नान नहीं।

  1. कद्दूकस की हुई फूलगोभी को माइक्रोवेव-सेफ बाउल में डालें। इसे 5 मिनट के लिए माइक्रोवेव कर दें।
  2. बाहर निकालकर चलाएं, और फिर से 4 मिनट माइक्रोवेव करें। इससे वह पक जाएगी और पानी बाहर आएगा।
  3. थोड़ा ठंडा होने दें ताकि हाथ लगा सकें। अब इसे एक साफ, पतले किचन टॉवल (मलमल के कपड़े) के बीचों-बीच डाल दें।
  4. कपड़े को चारों तरफ से बांधकर एक पोटली बना लें। अब सिंक के ऊपर जाकर इस पोटली को जोर-जोर से निचोड़ें! तब तक निचोड़ें जब तक एक बूंद पानी टपके। आप हैरान रह जाएंगे कितना पानी निकलता है। कपड़े में बची सूखी, भुरभुरी चीज हमारा "सोना" है।


स्टेप 3: "आटा" गूंथें

एक बड़े कटोरे में वह सूखी निचोड़ी हुई फूलगोभी डालें। अब इसमें अंडा, मोज़रेला चीज़, बादाम का आटा, दही, लहसुन पाउडर, बेकिंग पाउडर, नमक और हरा धनिया (अगर डाल रहे हैं) डाल दें।
सब कुछ अच्छी तरह एक कांटे या हाथों से मिला लें। यह एक नरम, थोड़ा चिपचिपा सा आटा बन जाएगा। इसे 5 मिनट के लिए ऐसे ही रहने दें, ताकि बादाम का आटा सारी नमी सोख ले।


स्टेप 4: नान का आकार दें

आटे को 4 बराबर गोलों में बांट लें। एक गोले को दो पार्चमेंट पेपर (बेकिंग शीट) के बीच रखें। अब हथेली या बेलन से इसे दबाकर एक अंडाकार या गोल आकार दें, लगभग ¼ इंच मोटा। बिल्कुल परफेक्ट होना जरूरी नहीं! नान की खूबसूरती उसके होममेड शेप में ही है। बाकी गोलों के साथ भी यही करें।

सुझाव: अगर आटा हाथों से ज्यादा चिपक रहा है, तो हाथ थोड़े गीले कर लें या एक चुटकी और बादाम का आटा मिला लें।)


स्टेप 5: तवे पर सेकें

आप इन्हें किसी नॉन-स्टिक तवे या ग्रिडल पर बना सकते हैं।

  1. तवे को मध्यम-तेज आंच पर गरम करें। उस पर थोड़ा सा तेल या घी डालकर फैला लें।
  2. धीरे से एक नान को पार्चमेंट पेपर से उतारकर गरम तवे पर रख दें। इसे 3-4 मिनट तक तब तक पकाएं, जब तक नीचे की सतह सुनहरी भूरी और दागदार हो जाए।
  3. एक कलछी की मदद से इसे पलट दें। दूसरी तरफ को भी 2-3 मिनट तक तब तक पकाएं जब तक वह भी सुनहरी और अच्छी तरह पक जाए।
  4. बाकी की नान के साथ भी यही दोहराएं, जरूरत पड़े तो तवे पर फिर से थोड़ा तेल डाल लें।

जब नान पक रही हों, तभी एक छोटे कटोरी में 1 बड़ा चम्मच मक्खन और 1 छोटी कलियां कुचला हुआ लहसुन (या ½ छोटी चम्मच लहसुन पाउडर) मिलाकर पिघला लें।
जैसे ही कोई नान तवे से उतरे, तुरंत उसके ऊपर इस लहसुन-मक्खन की चटपटी लेई को घूमर-घूमर कर लगा दें। यह स्वाद बढ़ाने के साथ-साथ नान को नरम बनाए रखेगा।
